Homemade turkey meatballs!!! Loving the freedoms of my new life, I had Hendrix at the pool for an afternoon swim, texted Jason at Comic-Con to see what he wanted for dinner, he said spaghetti. After our swim, we popped over to the store to pick up the ingredients, and Jason walked in to homemade sauce and meatballs simmering on the stove.
Making meatballs at church yesterday for this coming Saturday's Spaghetti Dinner Fundraiser for the kids.

These Ciabatta wheat rolls made into a meatball sub were Fantastic!
All you need are your favorite meatballs ( I make home made) but hey if you have a favorite frozen type go for it.
These delicious Ciabatta rolls and some of your favorite cheese I used Mozzarella and provolone here.
And your favorite Spaghetti sauce( again I have homemade) but I love the Paul Newman's own if I do buy it .
Quick and easy and we love to put them under the broiler to crisp the bread up a little more and melt the cheese.
Amazing stuff I tell ya :)
Make your self a dinner salad and your all set!

Twice I've been lucky enough to eat at The Little Owl in NYC. Their meatball sliders are amazing - one of my favorite things I've eaten in the last year. I was so excited to see that Bon Appetit had the sliders on their cover this month, with the recipe included inside. I finally got around to making them yesterday and I highly recommend them. They're easy, delicious and really cool looking.
More deliciousness ensued as a result of my making use of items found in my cupboard I’d long since forgotten about. Things that came tumbling out were a can of my favorite Thai green curry paste, a can of coconut milk, a variety of spices I don‘t get to use enough, and a few splashes of nam pla left in a crusty bottle. I had some mint left from last night's dinner so after quick consideration, I decided to make Thai chicken meatballs in coconut curry sauce.
Meatballs:
Ground chicken
Chopped cilantro
Chopped mint
Chopped scallion
Splash of coconut milk
Sprinkles of S&B yellow curry powder, cumin, turmeric
Soy sauce
Few drops nam pla
Several twists of the pepper mill
Minced clove or two of garlic
A few scrapes of ginger
Lime juice
Green curry paste
I oiled a hot skillet and dropped heaping teaspoons of the chicken mixture and fried until browned on both sides. I don’t like using more than one pan to cook things and it’s tastier to scrape up the brown bits to make the sauce so after all the meatballs were cooked and removed I threw in the skillet, in this order:
Sliced onions
A few coriander seeds from my tiny plot
Sprinkling of turmeric, cayenne, and cumin
Sliced mushrooms
Sliced red bell pepper
Broccoli florets
Before the broccoli picked up too much color, I stirred a little green curry paste then added the rest of the can of coconut milk. A note: I’d normally add nam pla here but I tasted a meatball and it was a bit on the salty side so didn’t add any to the sauce. Another note: I realized I had a can of “light” coconut milk, not the regular kind. I was annoyed with that but it thickened up nicely and wasn’t too runny.
After the curry reduced a little, I nestled the meatballs in the luscious sauce, shut off the heat, and added some thawed green peas, lots of lime juice, and torn cilantro.
Tip: You don't have to make the curry sauce - it was just a way for me to use up the coconut milk. Instead, you can just make the meatballs a little bigger and shape them into patties and eat it as an alternative to beef burgers.

Since you can't get the whole meals at IKEA in Hong Kong (apart from the one in Kowloon Bay) they made small stands with food. It's either popcorn, hot dogs, sundae's or swedish meatballs, with lingonberry sauce. And since this was my day of in the park, I decided to treat myself nice. And my friends.
My home country meets Hong Kong, in just the way I want it.
The husband is having a hard time with my pregnancy cravings, but he's super picky in general. Today for lunch I made myself a meatless meatball hoagie, on good French bread, with pizza sauce, vegan soy cheese and vegan parmesan. It was divine. But the heartburn afterwards...not so much.
We tried something different Sunday, and were happy with the results.
Baked meatballs using "mini-muffin" pans. Worked out great -- not very messy, and they didn't dry out (ground chuck, ground pork, egg, onion, spinach, garlic, parsley, all rolled in bread crumbs and baked in the pan @ 400 deg F for 20 minutes).
For marinara, instead of canned tomatoes I used Paramalat's tomatoes (no additives, sodium etc and really fresh-tasting). I use one package of strained tomatoes and one of the chopped -- then add the usual tomato paste, onion, parsley etc.
