Kind of a weird bun for a meatball sandwich, but it's what we had in the house, so we went with it.
Turkey Meatball Recipe:
(If you never used turkey for meatballs before, I say go for it. The first time I ever made meatballs, I used turkey --it was also the first time I cooked with ground turkey -- and it was so delicious, I think I've only made them with ground beef one time. & still, every time I make them, after Jonathan takes a bite, he asks me if it's turkey or beef. The point is, after you add all the tastienss, you can't really tell.)
Makes ~ 12 meatballs, depending on size
Ingredients:
1 lb ground turkey
2/3 cup Italian bread crumbs
1/2 cup Parmesan cheese
1 egg
3 cloves of garlic, minced
1 1/2 Tablespoons Italian Seasoning (if you don't have it, just throw in some basil and oregeno)
1/2 teaspoon red pepper flakes
1) mash all the ingredients together with your hands. (Gross, right? Just do it.) until all ingreidents are combined & sticking together. If it's too moist, add a bit more bread crumbs & cheese
2) Use an ice cream scooper to scoop uniform balls of the mixture. Roll into balls with your hands, place in greased baking sheet/pan
3) Cover with foil and bake at 375 for about 40 minutes. Remove foil for the last 10 minutes.

Swedish meatballs in a savory mushroom sauce, served over buttery egg noodles with parsley. Accompanied by a crisp and vitamin-rich salad prepared by Chef Tony.
Here's the recipe:
Meat balls:
1 lb. ground beef
1/4 c. quick-cooking rolled oats
1 egg
1/2 t. salt
1 T. instant minced onion
2 T. ketchup
Heat oven to 450 degrees. Combine above ingredients and mix thoroughly. Shape into 24 one-inch balls. Place in a 12" x 7 1/2" x 2" baking dish (I use a jelly roll pan) and bake for 8 - 10 minutes or until done.
Noodles:
12 oz. egg noodles
1 T. butter
1 T. fresh snipped parsley
Cook noodles according to package directions, drain and toss with butter and parsley.
Sauce:
1 10.75 oz. can cream of mushroom soup
1/2 c. dairy sour cream (you can use light, too)
1/2 c. milk
1 1/2 t. paprika
Combine sauce ingredients in a medium sauce pan and whisk to blend. Fold in the cooked meatballs. Cook over medium-low heat, stirring frequently, until hot. Serve over the parsley-buttered noodles. Makes six servings.

I went to IKEA in Red Hook and ate there. You can guess what I had.
IKEA is famous for their Swedish meatballs even though they are a furniture and furnishings store. Their dining area is a main attraction for many people.

I made these instead of meatballs.
Made of minced prime rib.
1 kilo needs four eggs, 2 cups of sour creme, two table spoons of Moutard de Dijon, a handful of chopped chives, 2 large, chopped red onions, salt, black pepper, a handful of dried, salad herbs, and that´s it.
Ab fab, if I may say so.
Menu today: mini meatball soup and beigli (Christmas leftovers)
Ingredients
2 tablespoons extra-virgin olive oil
2 carrots, peeled and chopped
2 ribs celery, chopped
1 root parsley, peeled and chopped
1 medium onion, chopped
2 bay leaves
1 cup (frozen) green peas
Salt and freshly ground black pepper
1 pound ground beef, pork and veal combined
1 egg, beaten
2 cloves garlic, minced
1/2 cup grated Parmigiano-Reggiano or Romano, a couple of handfuls
1/2 cup plain bread crumbs, a couple of handfuls
1/2 teaspoon freshly grated or ground nutmeg
6 cups chicken stock or broth
2 cups water
1 1/2 cups dried pasta, rings, broken fettuccini or ditalini
1/4 cup fresh minced parsley
Directions
In a deep pot over medium heat add oil, chopped carrots, celery, parsley roots, onions and bay leaves. Season with salt and pepper. Cover pot and cook veggies 5 or 6 minutes, stirring occasionally.
While the veggies cook, combine meat, egg, garlic, grated cheese, bread crumbs, salt, pepper, nutmeg.
Uncover your soup pot and add broth and water to the pot. Increase heat to high and bring soup to a boil. When soup boils, reduce heat a bit and start to roll meat mixture into small balls, dropping them straight into the pot. You are making meat dumplings that will cook in the broth. When you are done rolling the meat, add pasta to the soup and stir. Cover and simmer soup 10 minutes. When pasta is tender the soup is done and ready to serve. Adjust your seasonings. Serve soup with fresh parsely.

It's a good amount for a "small". Around $5. Yummy. It's probably the sauce that makes it yummy, but...the meatballs are good too. Potatoes were great too. Not that potatoes could be screwed up that much.
I used to eat swedish meatballs a lot growing up because the local market near us had it in their prepared foods section. Swedish meatballs and rice, mmm!
Our favourite dish for dinner these days. Spaghetti with meatballs or meatball sandwich. Recipe blogged here.
These meatballs were actually a packaged product, not our usual home-made. Mama Mancini's meatballs. Our first time use and probably not the last. Big & delicious.
