Delicious meatball calzone we had for dinner tonight.

New view on the good old meatballs... This is how they are served in the Tapas & Wine Restaurant on M/S Mariella.

 

No complains from me...even a seasoned meatball eater like me enjoy some new ideas ;)

These are the meatball sandwiches I made tonight, based on an inspiration from watching Food network (they were making strombolis). These were delicious. The meat was seasoned with italian spices (fennel, pre-blend italian spice, onion powder, salt and peppercorns) all ground up in a spice grinder. I used both turkey and beef for this. MMmmm.

That there on the bottom is a half a meatball sub sandwich with a half order of kale Caesar salad.

Our dinner on Valentine's Day. We didn't really do anything special this year but I guess we did make the effort to actually cook a proper meal. We're both working to deadlines and there hasn't been much proper cooking lately. Oh, that's mozzarella cheese oozing out of the centre of that meatball.

I'm 51 and have never made my own meatballs. Till tonight. Had some good ground beef from the TRU Meat Store.

 

I used the method from www.thekitchn.com/how-to-make-meatballs-cooking-lessons-f...

 

Lacking breadcrumbs, I crumbled up some wheat saltines crackers. Lacking Parmesan cheese I snuck in cheddar. Lacking parsley and Oregano I used Mrs Dash.

 

Lacking a mixing bowl I had to use the largest cook pot, which I then cleaned to cook the noodles.

 

I broiled them about 20 minutes then simmered in the sauce.

 

Made a huge mess.

 

Tasted pretty damned good.

INGREDIENTS

12 refrigerated or frozen (thawed) cooked turkey meatballs (from 24-oz bag)

1 cup well-drained sauerkraut (squeeze to drain)

1/2 cup shredded Swiss cheese (2 oz)

1/3 cup shredded Parmesan cheese (2 oz)

2 tablespoons Thousand Island dressing

1/8 teaspoon salt

2 teaspoons caraway seed

2 cans (8 oz each) Pillsbury® refrigerated crescent dinner rolls (16 rolls)

1 EGGLAND’S BEST egg, well beaten

 

DIRECTIONS

1. Heat oven to 350°F. Lightly spray 24 regular-size muffin cups (2 3/4x1 1/4 inches) with Crisco® Original No-Stick Cooking Spray.

2. Cut each meatball in half; set aside. In small bowl, mix sauerkraut, cheeses, dressing, salt and 1 teaspoon of the caraway seed until well blended.

3. Unroll both cans of crescent dough; separate into 8 rectangles. Firmly press perforations to seal. Cut each rectangle into 3 equal pieces. Press each piece into 4x2-inch rectangle. Gently press 1 rectangle on bottom and up side of each muffin cup, leaving both ends hanging over side of cup.

4. Place 1 meatball half, flat side down, in center of each cup. Spoon 2 rounded teaspoons sauerkraut mixture onto each meatball. Bring up ends of dough over filling; pinch tops to seal, leaving 2 small openings on sides to vent steam. Brush egg over dough. Sprinkle with remaining 1 teaspoon caraway seed.

5. Bake 12 to 18 minutes or until golden brown. Immediately remove from pan to cooling rack; cool 5 minutes. Serve warm.

We made the meatballs today for the youth groups upcoming spaghetti dinner fundraiser.

So, when I was a kid, this was a treat! It was also one of the few way that I would eat potatoes. A can of Fraser Farm Meatballs and Gravy with Butter covered Mashed Potatoes! I hadn't had it in years and it was everything I remembered. Awesome!

I didn't even know we had this hidden in the closet-under-the-attic, but I was curious.

This meatball was about the size of a grapefruit and cost only $1.99. I topped it with mozzarella and baked it.

March 01, 2020 - For lunch my wife prepared spaghetti with meatballs. Here are the meatballs in the pan.

Meatball & sausage, with mozzarella & marinara sauce. This should keep me going for at least two meals..:)

Homemade turkey meatballs!!! Loving the freedoms of my new life, I had Hendrix at the pool for an afternoon swim, texted Jason at Comic-Con to see what he wanted for dinner, he said spaghetti. After our swim, we popped over to the store to pick up the ingredients, and Jason walked in to homemade sauce and meatballs simmering on the stove.

Making meatballs at church yesterday for this coming Saturday's Spaghetti Dinner Fundraiser for the kids.

I have been on a Ciabatta bread/rolls kick most of the summer :)

Nope I won't apologize for it I'm loving it !

These Ciabatta wheat rolls made into a meatball sub were Fantastic!

All you need are your favorite meatballs ( I make home made) but hey if you have a favorite frozen type go for it.

These delicious Ciabatta rolls and some of your favorite cheese I used Mozzarella and provolone here.

And your favorite Spaghetti sauce( again I have homemade) but I love the Paul Newman's own if I do buy it .

Quick and easy and we love to put them under the broiler to crisp the bread up a little more and melt the cheese.

Amazing stuff I tell ya :)

Make your self a dinner salad and your all set!

These are also amazing crisped up on the grill :)

Twice I've been lucky enough to eat at The Little Owl in NYC. Their meatball sliders are amazing - one of my favorite things I've eaten in the last year. I was so excited to see that Bon Appetit had the sliders on their cover this month, with the recipe included inside. I finally got around to making them yesterday and I highly recommend them. They're easy, delicious and really cool looking.
