Sampling the local cuisine: I was instructed on how to eat lobster by a connoisseur whose grandfather and great-grandfather were both lobster fishermen in the province of New Brunswick.

Lobsters were very abundant. When I took this shot, we saw 6 lobsters at once in three little adjacent caves: 1, 2 and 3!
Inspired by Thomas Keller's Ad Hoc cookbook recipe. The crust on the 2 sides of the whole wheat and challah buns had been trimmed and the sides were brushed with melted butter and grilled crisp. The lobster chunks were mixed with aioli, chives, onion, celery, tarragon, truffle salt and pepper. They were placed on boston lettuce and topped with picked red onion.
Trenton Bridge Lobster Pound, Maine. One of the many lobster shacks where they cook lobsters. This is right outside Mount Desert Island. You choose a lobster (many on display), they put it in a net with a number, and shove the poor guy into these pots of salt water right outside the shack, where they're boiled to a crisp red. I don't like seafood.
A couple of lobster boats shot from the Memorial Bridge a while back. Gotta find something to shoot soon, as I'm posting up the shit. If this were $GS, it would have been laid off as part of the bottom 10%. Off with you poor performers. #needtimetoshoot
Not too long after I took this photo, Kristy licked the lobster eggs. She claims they taste really really good. I didn't verify this.
Although there are many ways to prepare lobster, at Trenton Bridge Lobster Pound only one way will do. Boiled in fresh, clean seawater over a wood fire produces the best lobsters in the rough. This simple recipe has brought customers back for over five decades, providing quality and consistency in a rapidly changing world.
