For some reason, I woke up today and felt compelled to make lobster rolls for the first time ever...including the mayo.
Went out on Allagash Family member's lobster boat the other morning to see what we could catch. More than a few surprises out in the bay
The first lobster pound appeared on Vinalhaven in 1875 and others quickly followed. Lobster pounds work in the same manner as the smack boats. The lobsters are kept in tanks with water passing freely through them. The first lobster pound was in a deep tidal creek, but today they are more common on docks floating in the harbor. Using the pound, dealers can wait for the price of lobster to increase or allow a newly-molted lobster time to harden its shell.

Lobster Recipe by FWC's own Lt. David Bingham:
Take a pair of cooking scissors cut the lobster tail down the center of the back and between the swimmerets. Pull meat from shell cut meat down the center of the back to butterfly it out. Place in small frying pan with spicy oil and butter mix. Add minced garlic to taste. Dice purple onion per preference. Sauté on medium heat both sides. Important Note: As tail starts to curl up make relief cuts in the meat to relax the tail. After cooked on both sides add onions. Add black pepper to taste and about 3 oz of heavy whipping cream. Flip tail over and although it may sound crazy… fold slice of sandwich cheese in half and place on top on tail. Lastly, add fresh bruschetta to top and serve.
NOTE:
These tails were removed at the dock. It is illegal to remove the tail while on the water.
