He's holding up an 8 pound lobster. It takes 7 years for a lobster to grow one pound. And then we eat them...they do taste very good though!

Hypomyces lactiflorum is a fungus that colonizes another mushroom and transforms it into something desirable and sought after. These likely started life as a Russula brevipes but were colonized before they matured. The Russula would have been white but the bright orange color comes from the Hypomyces.
St Abbs fishery research centre the larval stage is planktonic. They are carnivorous and cannibalistic and are able to live in this environment as food is added and the water is constantly in motion. The red pigment changes from red to blue after 3 days

An hour to kill before catching our ferry home was just enough time to visit the aquarium. Loved the big display with a sunken boat and lots of local marine life (huge dogfish, rays, lobster and many fish) but also good to see other species close up - like this blue lobster
