No need to bring a lunchbox: in every Turkish village or town you'll find restaurants where you can buy the most divine lunch: pide with cheese of with lamb's meat, prepared while you watch and served straight out of the oven // Geen lunchpakketje nodig: in elke Turkse stad vind je wel 'n restaurant waar je de heerlijkste lunch kunt kopen: pide met kaas of met lamsgehakt, bereid terwijl je toekijkt en zó uit de oven geserveerd

De variaties voor de vulling zijn eindeloos, maar voor Peynirli pide bijvoorbeeld:

Voor het deeg:

350 g tarwebloem

7 g droge of 14 g verse gist

3 eetlepels water

100 ml melk

2 losgeklopte eieren

1 theelepel zout

30 g zachte boter

 

Voor de vulling:

175 g verkruimelde (feta)kaas

1 losgeklopt ei

peper

1 eetlepel gehakte peterselie

enkele druppels tabasco

20 g boter in klontjes

 

Werkwijze:

Meng alle ingrediënten voor het deeg en kneed 20 minuten met de broodmachine, een kneedmachine of met de hand. Dek het deeg af met plastic folie en laat 30 minuten rijzen op kamertemperatuur. Leg het deeg op een met bloem bestoven werkvlak en druk het plat met de handen. Verdeel het in 6 porties en maak ze bolvormig. Druk de bolletjes plat en rol ze uit tot ovale lapjes van 15 cm lang. Rek de rand een beetje uit en sla hem naar binnen om. Zo krijgt de vulling geen kans om over de rand te bakken. Leg de pides op een met bakpapier belegde bakplaat.

 

Doe alle ingrediënten voor de vulling, behalve de boter, in een kom en meng met een vork. Bestrijk het deeg met olie, zodat de vulling niet in het deeg dringt. Strijk de vulling over het midden van elke pide en leg er klontjes boter op. Laat nog 30 minuten rijzen op kamertemperatuur. Bak de pides 20 minuten in een voorverwarmde oven op 200° C. Serveer ze warm.

Add cinnamon and sugar, and this bread is amazing. I really need to get some pepperoni and pizza sauce sent over...

The hot oven where this woman would bake the flatbread she's rolled out. In the bakehouse at Skansen, Stockholm's open-air museum and park. Down at this end of the demonstration there were some warm samples to taste.

A flatbread, or unleavened bread, is a simple bread made with flour, water, and salt and then thoroughly rolled into flattened dough. Many flatbreads are unleavened—made without yeast or sourdough culture—although some flatbread is made with yeast, such as pita bread. There are many other optional ingredients that flatbreads may contain, such as curry powder, diced jalapeños, chili powder, or black pepper. Olive oil or sesame oil may be added as well. Flatbreads can range from one millimeter to a few centimeters thick. Flatbread was already known in Ancient Egypt and Sumer. Wikipedia.
