Chapati, Chapatti, Chappati or Chapathi is an unleavened flatbread (also known as roti) from Nepal, India and Pakistan. It is a common staple of cuisine in South Asia as well as amongst South Asian expatriates throughout the world. Versions of the dish are also found in Central Asia and the Horn of Africa in countries such as Kenya, Tanzania, and Uganda, with the laobing flatbread serving as a local variation in China. Chapati is known as doday in Pashto.

Chapatis are made from a firm dough made from flour (whole grain common wheat), 'Atta' in Urdu/Hindi/Punjabi/Nepali/Bengali, and water. Some people also add salt and/or oil to the dough. Small portions of the dough are rolled out into discs much like a tortilla, using a rolling pin. The rolled-out dough is thrown on the preheated dry skillet and cooked on both sides. In some regions of Nepal it is only partly cooked on the skillet, and then put directly on a high flame, which makes it blow up like a balloon. The hot air cooks the chapati rapidly from the inside. In some parts of northern India (e.g. Punjab) and Pakistan, this is called a phulka (that which has been inflated).

A rectangular pizza. Pop it in the oven for a few minutes and Bingo! Not bad. Pretty good, in fact. I'm already planning how I can modify one of these in the future.
Notes on shot: Although the newer iPhones have a so-called "macro" focusing feature, the depth from front to back of this picture exceeded the camera's capability. So I made three hand-held shots and stack-focused them into one sharp photo. Yeah, I know. A lot of trouble for a little foodie shot. I didn't care.

Ingredients
175 grams Self Raising Flour
½ teaspoon Sea Salt
1 Egg
70 ml milk
75 grams very soft Butter
4 cloves well crushed Garlic
2 tablespoons very finely chopped Parsley
Salt and Pepper
Finely grated Cheese preferably Parmesan
Method
1.Preheat oven 200° fan, 220° C, Gas 7.
2.Put metal baking sheet in oven to get really hot (towards top).
3.Sieve flour and salt into a mixing bowl.
4.Add egg and sufficient milk to bring mixture together mixing with a knife (all milk may not be necessary).
5.When starting to come together use hands to lightly bring to a dough.
6.Knead lightly on a floured surface until smooth.
7.Roll out very thinly on a sheet of non-stick parchment so it can be turned round making sure that you only roll away from your body and that rolling pin is clean and floured at all times. Use short sharp rolls, do NOT press down hard.
8.Mix together garlic, butter, salt and pepper to form a paste and spread evenly over dough.
9.Sprinkle over parsley then cheese.
10.Slide paper onto hot baking tray and bake approximately 12 minutes.
