I'll admit that I sometimes get jealous of people eating their 'artisinal' pizzas, but the truth is I do not want a pizza topped with baby arugula/rocket, cherry tomatoes, and goats cheese. Anyways, I sought to mimic the bubbling flatbread experience by picking some up in my weekly shop and adding things I do enjoy on top!

We went to the Olive Garden for lunch today and I had the Caprese flatbread with a salad. It was a lot better then I remembered Olive Garden being.
Using up some of the lovely calabrese hot pepper lonzino I cured a while back.. This time as a gluten free grilled flatbread.

INGREDIENTS
1 cup pitted ripe olives
1 cup pimiento-stuffed green olives
4 cloves garlic, chopped
2 tablespoons capers
1/2 cup Italian (flat-leaf) parsley
1 teaspoon dried oregano leaves
1/4 cup Crisco® 100% Extra Virgin Olive Oil or Pure Olive Oil
1 can (11 oz) Pillsbury® refrigerated thin pizza crust
1 cup grated Parmesan cheese
2/3 cup crumbled chèvre (goat) cheese (4 oz)
1/2 cup chopped drained roasted red bell peppers (from 7-oz jar)
1/2 cup sliced drained pepperoncini peppers (from 16-oz jar)
DIRECTIONS
1. Heat oven to 400°F. In food processor, place olives, garlic, capers, parsley and oregano. Cover; process with on-and-off pulses until coarsely chopped. With food processor running, pour oil through feed tube; process until well blended.
2. Spray large cookie sheet with Crisco® Original No-Stick Cooking Spray. Unroll pizza crust dough on cookie sheet; press into 15x10-inch rectangle. Bake 7 minutes or until light golden brown.
3. Spread olive tapenade over partially baked crust. Top evenly with cheeses, red peppers and pepperocini peppers. Bake 8 to 11 minutes longer or until golden brown. Cut into 24 squares. Serve warm or cool.

Lounge Flatbread warm flatbread with falafels, pickled red cabbage, tomatoes, cucumber, Roquito peppers, crushed smoked almonds, pomegranate, and hummus.
It's basically a deconstructed wrap. It's REALLY good and easy to deconstruct in your head to make at home. The hardest parts are the hummus and falafel, really.

Indian style dish with flatbread that looks like chapati, but it isn't really. It is Turkish bread "from the Levant". The vegetable dish is made with potatoes, chickpeas and red paprikas. Turmeric is one of the spices I used, adding the yellow color. It is very healthy!

A flatbread is a simple bread made with flour, water, and salt and then thoroughly rolled into flattened dough. Many flatbreads are unleavened—made without yeast or sourdough culture—although some flatbread is made with yeast, such as flatbread made with whole wheat flour. There are many other optional ingredients that flatbreads may contain, such as curry powder, diced jalapeños, chili powder or black pepper. Olive oil or sesame oil may be added as well. Flatbreads can range from one millimeter to a few centimeters thick. Flatbread was already known in Ancient Egypt and Sumer.

The term unleavened bread can also refer to breads which are not prepared with leavening agents. These flatbreads hold special religious significance to adherents of Judaism and Christianity. Jews consume unleavened breads such as matzo during Passover.
Unleavened bread is used in the Western Christian liturgy when celebrating the Eucharist. On the other hand, the Eastern Churches explicitly forbid the use of unleavened bread (Greek: azymes) for Eucharist as pertaining to the Old Testament and allows only for bread with yeast, as a symbol of the New. Indeed, this was one of the three points of contention that brought about the schism between Eastern and Western churches in 1054.[1]
Canon Law of the Latin Church of the Roman Catholic Church mandates the use of unleavened bread for the Host, and unleavened wafers for the communion of the faithful. The more liturgical Protestant churches tend to follow the Latin Catholic practice; whereas, others use either unleavened wafers or ordinary bread, depending on the traditions of their particular denominations, or local usage.

Terrible picture. I've been actually meaning to remake and reshoot this, but well, I will eat it ALL. It would be dangerous.
