Turkish flatbreads filled with wild foraged Lamb’s quarters (wild spinach/orach), sautéed onion, feta. Turkish Greek yogurt dough, parsley and nigella. Thanks for this idea Polya @cookingwithpau ❤️ your perfect execution of these with wild greens brings me back to growing up with Turkish friends in Germany and is a total childhood comfort food. The flatbread this time was the special "company" version, which is larger and thicker. For this they have to fire up the big oven. They cook the bread directly on the stones below, with the fire to the side, so sometimes you have to pick a stone out before you hurt your teeth!
Flatbread pizza with dried figs, crispy prosciutto, blue cheese crumbles and an apricot preserve base. Topped off with fresh arugula sprigs and a drizzle of Demi glaze.

This morning I read Mark Bittman's recipe for olive oil matzoh, and thought I'd give it a try. The first batch out of the oven was pretty bad, but once I got the size and the time down they got pretty toasty and crisp.
I really struggled with these HF meals to make them vegan (since I forgot to select my meals this week, I did not get vegan food). This one has real mozzarella in it because I couldn't resist (it has has vegan mozzarella)
