嘿,原来是种面包。

幸好yarui他们去布拉格前做过功课,不然就上当了。

这种dumpling面包和我老家的糖糕真的很像呢。

I call Dumpling my experiment. She's never been sick a day in her life, but she grew very slowly and isolated herself from the rest of the sheep. She seems like she may be partially blind. She's a four-way cross: Katahdin x Dorper x Hampshire x Suffolk.

It's plum season! And this is a plum dumpling, rolled in roasted breadcrumbs and sprinkled with cinnamon sugar. It may look a bit humble, but it's absolutely delicious... so delicious that I only remembered to snap a picture after I'd eaten all but the last one.

 

I bought a bunch of plums at the store today because right now they're fairly cheap and I can get fresh local sun-ripened ones. And then I remembered that I hadn't had plum dumplings in ages, and how much I love them, and so I decided to cook up some immediately.

 

It's a fairly simple recipe in which de-stoned plums are wrapped in potato dough and then boiled in salted water for about ten minutes. The still-hot dumplings are then rolled in breadcrumbs that have been roasted in some butter until they're golden brown and crunchy, and then they're dusted with a small amount of cinnamon sugar or just plain powdered sugar. Eat while still warm. Scrumptious!

 

It may seem a bit weird to have a sweet dish as a main course, but we have a few traditional foods like that, probably thanks to the times of the Austro-Hungarian Empire. And it's not that sweet a dish actually since the only sugar I used is the one sprinkled on top, and it's best when cooked with plums that are somewhat tart in taste.

My mom's recipe for chicken and dumplings.... our Sunday, stay in your jammies through lunch, meal.

whole chicken

salted water to cover

2 cups all purpose flour

milk

salt

pepper

 

Simmer chicken on the stovetop in a large pot until meat is done and falling off the bone. Remove the chicken. If you are a lightweight you can skim the fat off… but why on earth would you do that really?

 

While the chicken is cooling, mix flour and milk until ball is formed (like a biscuit consistency). Roll out dumplings on wax paper or foil, dusting with flour to keep from sticking, until 1/8 inch thick. Yes, super thin. Cut into strips (I like to use a pizza cutter) and place back into boiling broth, a few at a time.

 

Pick chicken while dumplings are cooking and add back in with dumplings. Add a half cup of milk and salt and pepper to taste. Dumplings should take about half an hour until tender and cooked through. Serve hot from the stove. If too thick, add water if desired.

I love taking photos through this window where they make and cook (via steam) the dumplings.

I don't know why so many of these links say "not available". Very annoying. I'll try to fill them in on my own. But in case I don't get to it, these all came from my favorites. There are also 2 more that I'm going to put in the comments because I really really wanted to put them in my mosaic but they were the type to be blank white boxes.

  

Why I like these images: colors (turquoisey, seafoamy, greens, neutrals, pale aqua, peachy pink), fussy cuts, simple patterns, hexies, sketchy embroidery (machine and hand), linen, stripes, small squares. I don't intend for this to be a list of musts, by the way. Most of them are mutually exclusive. Just a list of things I like.

It is cold here today so I needed to make something that could be warmed up for lunch.

This dumpling is a common dimsum in Guangdong, Hong Kong and Macao. The soup with shark fins are stuffed into the dumplings, with a piece of iron at the bottom. This food should be served carefully, because the soup will spill out. The ingredients in the dumpling contain pigskin, aspic, shark fins, with a large number of collagen solidified into semi-solid. The fillings will change into hot soup sealed in the dumplings when cooked. As the soup inside is much hotter than the skin, in order to avoid the mouth being burnt, it is better to bite a hole on the skin dumpling and sip the soup inside.
