Sadly, wonton wrapper dumplings really, really really don't steam well. Their skins are too thin, and the dough practically falls apart. Mucho aggravation. In the end, I carefully plopped them into an oiled pan, and made pot-stickers, which were far more structurally sound.

These are so yummy but pure torture when they are first served. They’re steamed and full of the meat juice so they’ll sear your tongue if you’re too impatient.
These dumplings reminded me of shanghai dumplings. Because these where cooked in a cast iron like pan the bottom of the dumplings were crispy but yet chewy. When you bite into each dumpling the delicious juice oozes out. These were some of the most delicious dumplings I've had in a long time.

We went to Din Tai Fung a fancy, high end dumpling house, this evening for dinner. It's not your street vendor dumpling house, it was in a super high end mall (felt like I was walking around in the Bellevue Mall). However the dumplings were very good, I especially enjoyed the soupy xiao long bao. I think I must have eaten like 15 of these. We also got some large steamed pork buns, which were tasty though I prefer the small ones.

This recipe was shared in the kitchen by Granny in 1982. She mixed, and I wrote! She passed in 1987 at 98 years of age. The card is weathered by years of broth, flour, and butter splattered on the card.
Here is what Granny said to me...on how to make her great dumplings. I have been trying ever since, but surely not to the perfection of Granny!
Granny's Dumplings
Mix liquid by hand: 1 stick of melted butter, 3 eggs, a little salt, and 1/2 cup of milk. Add flour a little at a time until about using two cups of flour. It will be a soft texture. (Granny's mixture is sitting in a bowl of flour.) Roll flat on lots of flour, on the countertop. Roll a bit at a time to 1/8 inch thin. Cut long and thin. Cook in boiling chicken broth (a pot full). Add a few pieces at a time to keep from sticking. Cook a long time with lid off till gravy thickens. Serves large crowd.

The spicy sauce relies on hot oil being added to chilli powder to make chilli oil. The recipe suggested 5 tbsp chilli powder. I used 1 tbsp.

Sushi is now sharing a cage with Pudding though. hahaa, Pudding appreciates her presence more, it seems. might be shopping for a new girlfriend for Dumpling soon. however, i wonder if Dumpling with miss Sushi's wonderful nesting abilities. the little girl loves to and spends quite a lot of time fluffing up the bedding! :)
