We made 46 dumplings tonight. 16 of them were cooked up as pot stickers right away. The rest are in the fridge waiting to be eaten.

This day the class learned how make dumplings from the kitchen staff at Tianjin University of Finance & Economics (TUFE) in Tianjin, China, where we were staying while attending our overseas class in Intercultural Communication. Making half moon dumplings takes some practice to pinch and fold in all the right places. The dumplings can be filled with meat or vegetables and is served with soy sauce or a hot sauce. Dumplings are a treat since they take more time to make than other dishes and are generally made for special occasions, such as Chinese New Year or the August Moon Festival. Taken June 2002 using a Chinon CE-4 SLR 35mm.
Here is a close up on the dumplings. The raw dumplings are placed in a flower arrangement in the oiled non-stick pan. Once the bottom of the dumplings caramelize add half a cup of water and close the lid.
This will ensure the bottom of the dumplings are crispy but the rest of the dumplings remains soft as its cooked by the steam.
The end result is that they slightly stick to each other , so its easy to pour the contents onto a plate while still in its flower form.
This restaurant had a wonderful selection of steamed dumplings to try. Since, I'm a huge fan of steamed dumplings and these were amazingly good I was just dripping with happiness.

Do you love Clootie Dumpling but can't be bothered boiling it for 3 hours well here is a recipe which will cook it in 6 minutes in a microwave oven and it tastes just as good.
Here's how I made these two.
Ingredients

Half Pint Water
2oz sugar
1 Rounded tablespoon mixed spice
1 Rounded tablespoon cinnamon
8oz margarine
1 Cooking Apple - grated
8oz Sultanas
8oz Raisins
8oz plain flour
1 teaspoon bicarbonate of soda
2 eggs - beaten
Method

Put the water, sugar, mixed spice, cinnamon, sultanas, raisins, apple and margarine into a saucepan, Bring to the boil and simmer for 1 minute.
Remove from the heat and add the sieved flour and bicarb and mix well.
Then add the beaten eggs and mix well.
Pour the mixture into a medium sized microwave-suitable bowl which has been lined with cling film that goes well over the side but do not cover the mixture with cling film.
Cook in the microwave at 1000W for six minutes (10 minutes in a 650W microwave).
Allow to stand until cool.

Rice dumplings, or 粽子, are available all year round, but they are traditionally eaten during the Dragon Boat Festival, which falls on the fifth day of the fifth lunar month. (This year, it falls on 11 Jun 2005.)
There are different stories on the origins of the festival, but the widely accepted one is that it commemorates the death of Qu Yuan, a patriot in the fourth century BC, who drowned himself in protest against political corruption.
He was respected by the people, who went in boats to search for his body. This became the origin of the Dragon Boat races.
When they failed to find his body, they placed rice in the river as a sacrifice. The leaves to prevent the fish from eating it. This has evolved into today's rice dumplings.
I think Colleen or Will came up with the idea outside of Dumpling Man in NYC. The patty is a pork dumpling filling (ground pork, napa cabbage, ginger, green onion). I enhanced the idea with green onion pancakes for buns. There's a little soy-rice vinegar-ginger dipping sauce on the side.
Went on a dumpling crawl with some friends from work. I ate ~20 dumplings across 9 different dumpling establishments. By the end you don't really want to look another dumpling in the face. Of course it was turned into a competition. Here's the point system:
Points are awarded and revoked based on simple tasks. The goal of the point system is to reward variety while maximizing dumpling consumption.
1 point for each dumpling you eat
1/2 point for each Tsingtao consumed (or other drink from Far East)
2 points for each dumpling house you order and consumed dumplings
1 point for each dumpling house you eat a sesame/golden pancake
-1 point for each dumpling you buy that is not eaten
-1 point for each time you vomit

Here the dumpling squid is almost completely covered in sand, with only one the eyes looking out. With one remaining arm, it shovels more sand on top of himself.

We invite friends new and old to come celebrate the Year of the Snake by making dumplings - egg and scallion, pork and cabbage. It was a group effort, what with making dough, skins, the filling, folding the dumplings, and then boiling and eating. Thank you everyone for being a part of it! Oh, we also enjoyed some mah-jong at the end. =)
