Cucumber Salad (Agurkesalat)

From My Danish Kitchen.

Ingredients:

1 English cucumber

1 c. water

1 c. white vinegar

1 c. sugar

15 whole peppercorns

1 sprig fresh dill

Slice cucumber into very thin slices. Combine water, vinegar, sugar and peppercorns in a small cooking pot and heat over medium heat until sugar is dissolved. Do not boil. Once liquid mixture is cooled off, add sliced cucumbers and dill. Place in refrigerator for 3 hours to marinade before serving. This salad becomes tastier as it sits. You can store it in the refrigerator for up to 1 week.

I found this one in my garden this morning. I wonder what it says?

My first ever cucumber growing in my garden

Aka Suyo Long. A heirloom from China. Shape is unique...ribbed and very slim. Spines wipe off easy. Long green fruits are mild, sweet and burpless. Production will be all at once, once they start arriving later in the season.

These vines can climb as high as 6ft which is the limit of the fence used.

Cut the seeds out of the cucumbers. This is just his way to do it.

Jim's attempt at the perfect cucumber and cream cheese sandwich. Still room for improvement. Inspired by our afternoon tea at the Amba Hotel, Marble Arch, the previous Monday while we were on leave.

a friend of Jenna's gave us a cuke from her CSA under the condition that I post photos of cucumber seltzer made with it, so here they are.

Album of the day of June 20, 2014

I have the need, the urge, the desire to make things. I love creating and the creative process. These candles are ready for their second pour and in a few days they will be ready to use.

I am researching and learning how to make candles. This is my interest at the moment. I also have some more 'bots to create, but they will come between batches of candles. My goal with these is to produce a candle with not only a wonderful cold throw, but also an amazing throw when lit. Mottling may not be something everyone likes, but I happen to think it lends itself nicely to the "home made" part of this project.

Here in Germany we had a bad case of EHEC infections (E-Coli). Authorities warned everybody of eating Cucumbers, Tomatoes and lettuces.

Today this warning has been taken back as some germ buds seem to be the origin of those infections.

Horray for Cucumber Salad!

Orig. from the Mideastern country of Uzbekistan. A traditional var. now threatened with extinction in its land of origin, after 1998. Short vined plants offer chubby fruits that start out a nice green and then turn a weird golden tan brown with smooth skin AND fine webbing! Skin is tougher than expected...being smooth.

This is my first attempt at Cucumber Kimchi. I can't get the little dill cucumbers that you traditionally stuff so I just chopped them up into big chunks. It is wonderfully refreshing and delicious.
