I have been getting a lot of cucumber from the garden so I decided to make cucumber salad one night.

 

The cucumbers were sliced very thinly and then soaked in salt and water for about 20 minutes. After 20 minutes, rinse well and squeeze all of the water out of the cucumber. The cucumber should be relatively dry.

 

Dice some Vietnamese coriander (Persicaria odorata) and mix in with the cucumber. Vietnamese coriander is one of my favorite Vietnamese herbs and conveniently I have some growing as well. One thing I didn't add here is diced carrot since I didn't have any but it's usually a nice complement.

 

Shrimps are boiled mixed in. Crushed roasted peanut is added on top.

 

The dressing is a mix of crushed garlic, crush thai chili peppers, sugar, lime juice, fish sauce, and water. Dressing should only be added when ready to serve.

very easy. i cut a verrrrry thin piece of onion and separate the rings, and place them in a bowl with white vinegar. add slices of cucumbers and pepper and let it marinate for about an hour, stirring once or twice. the onions give it a more complex flavor without being tooooo oniony. i don't eat the onions as part of the salad but if you want, you can :)

This is one of my latest cravings. When I visited friends this summer, Stacy made a tomato, cucumber and onion side salad. It was so good, but I don't care much for onion. So, I made my own salad, but I added mozzarella cheese chunks. Holy smokes, it is so darn good.

This cucumber seedling was one of just 3 from last year's pack that has sprouted. I'm really hoping this little soldier makes it all the way to producing some delicious fruit for us again this year!

So we're sitting on our patio when a waiter approaches with a tray of cucumbers. We figure he's going to offer us a nice refreshing snack on this scorcher of a day. but no. "Hello Senoritas! would you like some cucumbers for your eyes?"

 

We figured "what the heck!"

This is a cold dish that can be served as an appetizer, side dish or even snack. Usually it's a side dish for a meal especially during summer. Couldn't find any similar online recipe so I will explain - it looks simple but the taste is beyond what you can think of because the dish contains fresh thin-chopped cucumber, salt, soy sauce, dark vinegar, sesame oil and sometimes thin-sliced/chopped, fried dry peppers. Because of all that, it has become a non-pickle dish :)

Two cucumber plants I have growing in my small greenhouse. Both are training up twine that's planted under each plant and tied to the top of the growhouse frame.

Woke up this morning feeling extremely nauseated. Tried to stick it out at work, but ended up leaving around 10AM. Slept most of the afternoon off and on. Sure felt good. Decided to go outside to make my daily phone call to my mother when I saw this bright yellow flower in my yard with a cucumber beetle busy doing whatever it is they do. I'm enjoying this "no pressure" approach to photography. :)

Cucumbers and tomatoes.

This is a short fruited Lebanese-type non hybrid cucumber. I got the seed from The Real Seed Company a couple of years ago. Sowed my last four seeds this spring but two seedlings developed stem rot and died. I have one plant in the greenhouse giving the 'Passandra's a run for their money. This one is outside where I'm trying to persuade it to ripen one fruit so I can harvest some more seeds. The RSC didn't have 'Mirella' in its seed listing this year and it's apparently quite difficult to persuade it to set seed. *Fingers crossed*
