A sea cucumber's defense mechanism is extremely radical: it literally throws up its internal organs which, while it may distract any potential attackers, ultimately kills the animal. I don't quite understand it, but we witnessed the act after some fisherman tossed a sea cucumber onto the rocks.

As was told to me..."named after a farmer and a soldier. Has been maintained by the same family since after the war of 1812. Fruits are white, 8" and remain crisp for a long time. Plants are very productive and disease free.
By chance, I was gifted with one of these illegal (I'd imagine) cucumbers to try. The growers who gave these to EP - who then passed one off to me - apparently smuggled the seeds into the country from their village in China. Since it was my first encounter with this species, I was shocked at how sharp its tightly coiled tiny thorns were. Thankfully, I was advised to peel the skins off these cucumbers before consumption, else I would be lost what to do (that's when I was told it was a Chinese cucumber - it's lumpy appearance reminded me of bitter melon - this is far from it!). When I tried the peeled and chopped vegetable, I was shocked again to discover its incredibly cool crisp snap, the melon like sweetness and refreshing liquor that burst from each crunchy mouthful of the vegetable. Wow indeed.
Perhaps my senses were heightened because this was essentially an illegal "growth."

I've experimented to find the optimal size at which to pick these. Some of these are bound to have hard seeds in them, but I had to let them go to see how long they take to reach that stage. It's more an art than a science because some small ones have reached that stage as well.

The long cuke is a Suyo Long - asian type cucumber. Very, very prickly, with ridges that when cut into slices, make a beautiful cuke chip! The others are Snow's Fancy Pickling cucumber. The smaller one is perfect for making pickles, but I don't have enough time this year, so will let most of them get just a tad bigger and eat them fresh or share with family & friends.
The vine in our garden is producing copious numbers of delicious cucumbers like these. They sure taste good in my tossed salad.
