My take on smitten kitchen's Double Coconut Muffin. I kept the coconut oil and sweetened shredded coconut and used full fat buttermilk. I was inspired by 101 cookbook's Blackberry Macaroon Tart so I added blackberries and lime zest to my batch of muffins.

An example of vegan college dining. I got some Indian-spiced vegetables (cauliflower, celery, carrots, onions, potatoes), stewed lentils, and steamed asparagus from the dining hall. Back at my room, I added 1/2 a microwaved sweet potato sprinkled with coconut oil, cinnamon, and salt. Mmm.

I used coconut oil and flaked coconut to enhance the coconut flavor with the deep, dark chocolate

Here's the crumb of trial 2. The crumb was delicate, reminding me of a cake's.

 

The recipe varies from the more-common recipes in that I eliminated dairy ingredients and added a small amount of xanthan gum for additional structure. I also wrote out the recipe using weights instead of volumes, ready for conversation to percentages, the "baker's formula" being the kind of recipe I prefer to use, having learned of its convenience from my days of scale baking.

 

For my next trial, I am going to reduce or eliminate the eggs and see if the xanthan gum will be sufficient to maintain structure. In addition to structure, eggs provide fat, moisture, and emulsifiers, so I expect that I will need additional adjustments before hitting on a reliable formula. Still, I'm getting closer to an easy, reliable recipe for gluten-, dairy-, and egg-free bread that is low in carbs (next I am going to eliminate the sugars), high in fiber, and tasty on the tongue.

Salmon fish sticks. I love the writing in that Revenge of the Nerds movie where the nerd is asked, "Don't you know what this writing on my hat means?" The nerd responds, "Malcolm ten?" Later, the nerds marvel at the dinner prepared at their hero nerd's house who is now a Bill Gates type character sold out to the success of nerddom and now a changed personality. The nerd hero asks over dinner, "What's wrong?" The nerd answers, "It's just that I've never seen fish before that wasn't in stick form." Fish sticks. Just the idea cracks me up. I vaguely recall my mom fixing them when I was in the first grade. She also heated breaded scallops. I picked off the breading revealing a white disk. I put my disks together forming a cylinder. I recall asking if scallops were really a snake that was cut up. My mom laughed and answered, "Yes." Suspicion confirmed, I lived with this untruth for an additional 16 years. Scene II: Cape Cod, oyster shack. The proprietor had a large poster behind the fish counter depicting various seafood items. I noted the scallops were pictured, as, well, scallops. I said to the owner, a rough looking fellow unshaven and with an unclean white apron and twice my weight, "Your fish poster is wrong," with all of the certainty of a twenty-one year old. The owner sneered, "Oh yeah? What's wrong with it?" He left off the "Punk" but it was implied. I go, it shows scallop like a clam and it's really a snake that chopped up." He looked hard at me pathetically, then laughed like I was totally retarded. Then carefully explained the truth and the details behind their preparation. I blame my mother.

Decided to try my hand at making soap (ok, I got the idea in my head a few weeks ago and have been obsessing about it since). This is my first batch ever! Fingers crossed it turns out ok. It's currently sitting wrapped in a towel on the counter. I'll be able to unmold it in a day or two! Woooo!

(This recipe has been adapted from the #traditional #churning by hand directions and old fashioned cooling methodology to todays' simpler quick process.)

 

Ingredients:

 

¼ cup #CocoaButter

½ cup #CoconutOil

¾ cup #SheaButter

½ cup #EFA aka #EssentialFattyAcid #CarrierOil such as #Jojoba, #Grapeseed, #Olive, or #SweetAlmondOil

10-30 Drops #EssentialOil/Oils of Your Preference

5 Drops of #VitaminEOil (Antioxidant and Natural Preservative)

 

Directions

 

Melt the Cocoa Butter, #Coconut Oil and Shea Butter in a double boiler over medium heat, stirring occasionally. If using a microwave oven, cover bowl with dry wax paper to prevent splattering. It will take about 3 minutes depending in the microwave until butter/oil compound is completely melted into a liquid oil, stirring every 45 seconds with a spatula.

 

Add the EFA Carrier Oil of your preference (I used #SweetAlmondOil) and stir until well blended.

 

Add 10-30 drops Essential Oil of Your Preference (I used #SweetAlmondEssentialOil) until scent reaches the desired intensity and stir until well blended.

 

Remove from heat and/or microwave, Add the 5 Drops of Vitamin E Oil and stir until well blended.

 

Let stand and cool slightly.

 

Cover the bowl loosely and place it into the freezer for about 20-30 minutes until mixture starts to partially solidify. If it does not chill properly it will not whip up correctly.

 

Using a hand blender/mixer or an electric hand bender/mixer, whisk the butter/oil contents for about 10 minutes or until it is a creamy smooth consistency, ex. resembling whipping cream.

 

Transfer the whipped butter mixture to an air-tight #glass container such as a #BormioliRocco #Fido 0.5 L/500 mL #canning / #storagejar or a #BPAfree #plasticcontainer and place it into the refrigerator for about 10-15 minutes until the compound sets firmly.

 

Remove it from the refrigerator and store it in a cool dry place below 70°F or 21.11°C.

 

Note: It doesn't have to be refrigerated due to its #antiseptic qualities which help prevent rancidification, inhibit the growth and development of microorganisms, hence, prolongs its stored shelf life.
