sort of an experiment. i cooked the peppers and an onion separately (with garlic, ginger, and little chicken stock and water) which i then liquified with a stick blender and added to to the sautéed meat and vegetables. i wasn't bad but the potato i added was a mistake. it was too starchy with the rice, but it could have been that i didn't cook the flour long enough when i made the roux. i ended up blitzing the leftovers- it turns out it makes a pretty good soup base.

I made a basic vanilla GF DF cupcake and I used date sugar for the first time. Then I made marzipan but used the same (very brown) date sugar (my first time making marzipan). I made a circle of marzipan then flattened it on the top of the cupcake then rolled it in coconut. I then laid a strip of marzipan on top and put walnuts. I then made a sugar syrup (DF margarine and agave syrup) and heated it until it began to harden. I poured the syrup over the cupcake and added pomegranate seeds. OMG YUM!

We had Homemade Yukon Gold Potato Salad and Red Snapper for supper. I brushed the fish with a little coconut oil. Then added some Tarragon from the garden, some Porcini Mushrooms, some fresh squeezed lemon juice and slices and some Vadalia onion on top. I sprinkled a little salt and pepper and dill over the whole thing and baked it in tin foil on the barbecue. It was good!

One of the fatter turkey breasts i got at the co-op i sliced on the bias thinking they would pretty much act like pork cutlets. i let them hang out in buttermilk all night, coated them in flour, dipped them in (seasoned) egg, and coated that in panko bread crumbs. they fried up nicely, and they really do seem equivalent to pork cutlets, though adding a dab of coconut oil and lard to the fry oil really helped. served here with basmati rice, kewpie mayo, and some daikon salad.

We use coconut oil as one of our main cooking fats, along with local pastured butter and organic olive oil. Coconut oil has a higher smoking point than olive oil and butter, so it's very useful in high heat cooking. It makes the best popcorn when mixed with ghee and you can't beat potatoes fried in coconut oil. I've tried many different brands of coconut oil, and a few different varieties before finding Tropical Traditions and falling in love with their products. I have many of their products in my pantry: Gold Label Extra Virgin Coconut Oil, Expeller Pressed Coconut Oil, Coconut Cream, Shredded Coconut and I also get my tuna from them and I love them all - if you're looking for great quality coconut products look no further.

 

I use the various Tropical Traditions products for different things. The Gold Label Extra Virgin is a fragrant coconut oil, meaning that is smells of coconut and infuses food with a slight coconut flavor. If you've ever tried using it for cooking mushrooms or something you quickly realize that it works in some applications and not others. I do not like the virgin oil when it comes to frying potatoes, mushrooms, onions or other savory type applications. It does however work beautifully in baked goods where a hint of coconut enhances the flavor. I use the Virgin Coconut oil in my healthy carrot oatmeal bites. It also makes basmati rice taste exotic and tropical. Simple add one Tablespoon for each cup of rice and you'll be pleasantly surprised at how delicious the rice is. I also use it for hand & body lotion, hair conditioner and I use it to season all of my wooden cooking utensils. I love having one product I can use for so many things.
