Our 100% RAW, Wild Jungle Peanut Butter is cold-milled from exotic jungle peanuts harvested in the Ecuadorian rainforest. Loaded with protein and all 8 essential amino acids, this nutrient-dense nut butter is great on crackers and apple slices or even blended into smoothies and baked treats.

The experimental crust of this pie is made with coconut oil in place of butter, shortening, or lard. I do believe the experiment is successful. It results in a slightly crunchy crust, at least mine did. I like it.
This started out as an ordinary apple pie but then I decided to include plums. Then instead of using corn starch or flour to thicken, I chose my prepared oatmeal mixture which includes trail mix. I augmented with more dried fruit, raisins, cherries, cranberries, and pecans. I added a cup. Decided that wasn't enough so added another cup. I included coconut oil in place of butter in the filling. This made more filling than the pie could contain so I ate it apart from the pie. It was a little bit like the most amazing granola in the history of ever.
Pie crust
* 1 + 1/2 cup sifted flour (cold)
* 3 rounded tablespoons coconut oil (cold)
* 1/8 teaspoon salt
* 1 Tablespoon palm sugar, organic sugar, whatever
* 1/4 cup (cold) water
Rub the chilled coconut oil into the flour in the usual way to pea-sized flour-coated nodules. Add just enough water to bring the mixture together. This needn't be sweetened. It can be seasoned however the impulse strikes.
Pie filling
* 5 or 6 apples, depending on size
* 3 plums
* 1 + 1/2 cup to 2 cups oatmeal combined with trail mix
* extra dry fruit as desired
* 1 rounded tablespoon coconut oil
I used organic palm sugar because I had it on hand but it's not necessary. Any sugar will work, including brown sugar or honey, or none at all if you prefer to keep it to the natural sugar in the fruit. I added very little, just a tablespoon.
My prepared oatmeal mixture contains a load of cinnamon, various nuts and dried fruit, so I didn't add any more spices. If I didn't use the oatmeal, then I'd have added spices, namely, cinnamon, allspice, clove or possibly ginger. I have a tendency to overdo things.
Pre-bake pie crust for 12 minutes at 400℉. Heat the pie filling on stove top to cause apples to shrink and fruit to release liquid which is soaked up by oatmeal. Bake for 25 minutes at 400℉.

Here the yellow segments pulled from the great green fruit have been cleaned and lightly salted, then deep fried in extra-virgin coconut oil, extracted from coconuts obtained from trees growing in our yard. Split coconut shells were dried for several days under the baking hot Kerala sun on the terrace. The soft white flesh dessicated to form copra, which was separated from the oil and sent for extraction to the mill. The oil cake left behind after the extraction process makes great fertiliser and even used as cattle feed.
By the way deep fried chaka (jackfruit in malayalam) chips are faintly sweet. When they are frying, the house fills with the tropical scent of fresh coconut oil.

This time riffing off the success and pleas for repeats of my gaspacho and corn salad I experimented a bit, this time for the soup with another highly abundant ripener at the time, Watermelon!
While not as tasty to me as the pure tomato-based gaspacho, it was sure pretty. However, the watermelon was soooo very ripe and local that it was super, super sweet which actually distracted, I thought, from the other flavors. Still, it was well-received though a lesson to me in honoring each ingredient -- especially those at their shining moment -- instead of attempting to conquer it.
For the corn salad I played it safe by making one very similar to the previous one I'd made (seen in previous pictures in my stream) but also a curry version which is on the left, lending it a deeper yellow appeal.
Despite my above critiques the dishes were gobbled up and there was little leftovers at the abundant potluck these played a part in.

Like brown rice, red rice is minimally processed to retain more of the fiber, vitamin, and mineral content of the original rice kernel. This particular variety - Pachchaperumal, named for its resemblance to the fabled color of the Buddha’s skin - has a deep, rich burgundy color when cooked. It is high in proteins and is said to have been the staple of the great armies led by semi-mythical chieftains known as the “Ten Great Giants.” The rice is considered divine and often offered as alms, gratitude offerings or in vows seeking rains or protection of crops. Also it has been used as a remedy in ayurvedic healing. It is delectable and provides a distinct grain eating experience not to be missed!
