Stewart Brewing is one of only two remaining breweries in Edinburgh. Steve Stewart is a young and enthusiastic brewer not afraid to experiment with contemporary beers, which he produces in small batches to unique recipes.
I’m not a big ale drinker myself, but my beer-loving, CAMRA-devoted ex-publican companion was impressed and happily lugged a keg of Steve's IPA home.

Brew pot with Weld-B-Gone ball-lock valve installed. The hole was punched about 3/4" from the bottom in order to trap the hot break (although 1/2" probably would have been sufficient). Even though you don't want to let cooled wort sit, waiting just 3-5 minutes allows the hot break to settle and remain trapped in the brew pot and out of the fermenting vessel.
