Our amuse bouche from dinner at Farallon a couple weeks ago. It was a salmon mousse with herb oil. Pretty good.

Farallon was actually one of the better lit restaurants I've been visited. The dining room itself was dark enough for the right ambiance, but there was a nice pool of light in the middle of each table. At the beginning of the meal, I was able to shoot comfortably at ISO 800 and f/3.5 with the 35mm lens. Midway through, they dimmed the lights a bit, but I was able to stay at ISO 800 and just go to f/2.8 with perfectly reasonable shutter speeds. There was a little drop-off in the light toward the back of the table, but it wasn't too bad.

Sea Urchin Custard with Green Apple and Shellfish Ragout

Notes: WOW! The phenomenal combination of flavors totally knocked our gustatory socks off!

It consists of: a glass of foie gras mousse with crayfish, croquette with cheese and inside the candy-wrapped is black trufflle butter
