Notes: The "amuse in a glass" must be a signature since the amuse we had in The Modern Dining Room last year was also designed that way though those contents were much more colorful than these. We remain amazed at how they manage to get the contents inside while still keeping the glass immaculate.

 

I don't remember what flavored the wonderfully smooth panna cotta, but when taken in with the grapefruit gelée, the almonds, and the grapes, it all made for a seriously delicious combination.

 

For some strange reason, the implement provided was not a spoon but a little fork with a slightly curved bowl (a "spork"?), which made it difficult to spoon up the liquid at the bottom. Since we weren't about to leave over any of the delectible liquid, we just picked up the glass and drank it.
