Dinner at our hotel starts with an amuse bouche of crème brûlée with foie gras. My pea soup is followed by grilled trout with cabbage and other vegetables.

An amuse-bouche served at L'Oustau de Baumaniere, a hotel-restaurant in Les Baux, Provence, France. It's a tomato, olive oil and herb coulis with raw mussels in it. Yummy.
Served with honeydew melon, yellow tomatoes, Canoe staff harvested microgreens (coriander sprouts), melon jelly, maple sherry vinegar.
Simple and refreshing; slightly savoury due to the melon salad.
