Maple syrup in Michigan.
This was the original sugar shack where they distill the syrup. The shack was built by "Grandpa." It's now abandoned. What appears to be ropes is actually the PVC sap lines that now run through the forest.

Grandpa Kempton contracted with a local farmer to collect maple sap from trees on Kempton Farms and boil it into syrup. Over 1700 taps were placed in trees this spring. From each hangs a silver collection bag like these.
I can't help myself. I'm obsessed with pancakes.
And a question posed itself for an answer today: How does one hold hope lightly?

I bought a soda stream on Friday. Sunday am I made less-sweet syrups (3 c water to <1c sugar, eyeballed) with lemon verbena, lavender, and cherries with ginger. mmmmm.
Entry level maple syrup process. Dave, the one on the left, owns a section of woods that contain a number of sugar maple trees. In the spring of the year he taps the trees to extract the sap. The sap is then boiled over this wood burner to reduce it to syrup. It takes about 40gal of sap to produce 1 gal of pure New York Maple Syrup and a whole lot of firewood. The gentlemen on the right is my good friend "Ski" he is Dave's mentor in learning this process. We have all tried our hand in this syrup making. It is a lot of effort for a sweet reward. Pure Maple syrup is expensive. If you try this process you will understand why.
When life gives you cherries, do something! I finally decided to address my frozen Okanagan cherries in more creative ways than simply as (tasty) ice cube replacements... What resulted was a delightfully almond & eggy clafoutis. The leftover juice was turned into cherry-flavoured (and coloured) simple syrup. Great for pancakes and beverages.
I've been here twice and each time I've been rather pleased. The prices could be a bit lower, and the quality of the baking would be much better if they did not place things in the cooler. Tends to dry cakes out. Overall this is a great place to check out when you're in the Downtown LA area.

last week I went raspberry picking... once I was home many of the berries had sorta cooked in the car, so I rinsed them off and added just a bit of sugar and cooked them down (mashed em' with a potato masher) and then strained this mixer thru cheese cloth. Its not jam, its not jelly... its syrup! And its friggin' delicious on pancakes.

Here's my elderberry syrup bottle up. As soon as I get reliable dosing information I will post the instructions for making it on Stitch and Boots. I used Rosemary Gladstar's recipe but she gives disappointingly thin instructions on how much to use, how often, and safety issues. Elderberry is mild when cooked and shouldn't pose any safety issues, but it's important to know if this can be taken long term or how much is an effective dose.
