The syrup makes this delightfully fine froth as it boils away. They have to reduce the syrup from 40 gal. of sap to one gal. of syrup. That's a lot of boiling.

and poured sugar syrup boiled with lemon peel over them.

The forager guy at the farmers market had elder flowers! I had to get some so I could try and make my own syrup. I'm sure it'll mostly taste like sugar, but it's as close as I'll ever get to the real thing :)

Day 55/366 project. (Was taken on 2-26-12)

Okay, so they were SORT of burnt. But yummy! Belgian waffles from Costco.

Had one of those mornings where I woke up too soon but couldn't get back to sleep. Nearly made it but a marching band went past - no kidding. I thought I was hearing things.

So anyway we got up and Leah made pancakes while I made coffee (didn't snap those, maybe if I learn to do latte art...).

Decided to record the moment and besides, posting food photos is in Flickr's terms of service ;)

The heart of a sugar shack. Maple sap starts in the center in a warming tray and flows through channels, boiling the entire way and becoming more concentrated along the 60 feet of channel. At the end, when the temperature reaches about 216 degrees Fahrenheit, an automatic valve opens and allows some of the syrup into a pail.

Oranges in Syrup

Adapted from a Middle Eastern recipe, this is very refreshing and fairly simple to make. The original recipe calls for pistachio nuts for sprinkling, and of course sugar to make the syrup.

Husband and I agreed that serving fruit in nice glasses, presented prettily and with a sauce and/or topping, makes such a nice finish to a meal. It wouldn't be anywhere near as exciting to sit there and peel an orange to eat.

Serves 2

Syn value is negligible

2 oranges

½ cup sweetener

1 tbsp rose-water

½ pkt sugar free orange flavoured jelly crystals

fat free fromage frais to serve

handful toasted buckwheat

Using a vegetable peeler, peel one of the oranges down to but not including the pith. Cut the orange peel into fine strips and boil in water several times to remove the bitterness. Drain.

Add 300ml water to the orange peel, along with the sweetener and bring to a boil. Sprinkle in the jelly crystals and stir well to dissolve. Add the rose-water and leave to cool, but don't leave it too long, as you don't want it to set to a jelly, just thicken a little.

Completely remove the pith from the oranges and cut them into thin slices. Arrange in two dessert bowls, pour over the syrup, serve with fromage frais and sprinkle some toasted buckwheat over the top.

Among all the various syrups in the market a torex cough syrup is indeed the best. In fact it is an amalgamation of a medicine that goes on to make the mucus thinner in the windpipe and the nose. Hence it is going to be ease if you release the cough from the nose. All the symptoms of allergies are overcome by the use of this remedy. Such a syrup can be consumed by adults and young children. Since it goes on to provide the benefits of honey along with tulsi it is better to be consuming it with a glass of lukewarm hot water. Some of the symptoms relating to cough might be a runny nose, sneezing, throat infections or it can be any form of irritations. In fact such a syrup works out to be the best when it is incorporated from herbal ingredients and there are no form of side effects.
