Imagine this: Your syrup and fruit topping comes to your waffle as usual, with hopes and dreams but no expectations. But today is different. It sees a new, fresh ingredient. Ok, she's a little tart, but the topping knew they'd be good together. Moving slowly toward each other, it was clear breakfast at this waffle would never be the same... No special effects! Just a light behind a jar of maple syrup, happy canada day!

I liked the very nice texture and the zesty flavour of the cake. Requests for "bake it again" too.

After baking the cake, supposed to pierce the top with a skewer (my cake tester) and dribble the lemon syrup over. The photo above shows the syrup still on top, in the process of making its way slowly through thecake.

 

I tried out four of Nigella Lawson's cakes in "How to be a Domestic Goddess". One thing about Nigella's recipes - they are absolutely reliable. All these cakes turned out pretty well.

There is this tiny little coffee shop in Fremont – E.T.G. (Espresso To Go). Very-very good coffee. Painted ceiling inside, crystal chandeliers, antique tea trays with pastry and antique tea cups… There is an old register, still in use (refurbished, I am sure). Very unique atmosphere. The only drawback – it is really tiny, there is only one table inside (for 2 people), and one outside.

 

I was trying to get more info on the place by doing a search on-line, but did not find anything.

I never buy or eat typical pancake syrup, which contains absolutely nothing even sorta related to a maple tree (check the ingredient list, which includes corn syrups, sodium benzoate, sorbic acid, hexametaphosphate, etc). While I love the flavor of real maple syrup, sometimes it is fun to jazz it up a bit. My mom used to melt real butter into real syrup and it was oh-so-good. I now do the same thing for my little family. Such a treat!

Soft and pillowy mochi with nutty roasted soybean powder, made even better paired with some smooth green tea ice cream. Didn't really need the syrup.

Minnesota State Fair

This stuff is SUPER syrupy sweet and thick. It will be interesting to see what the yeast does with this sugary beast of a wort. I'm half guessing that I may need to lay this brew down for some aging to mellow it out. We will see.

Home-made syrup from our own maple trees. We're not looking to go into production, but more as an experience for the boys. This shows how we went from a gallon of sap to a more condensed solution and finally to what I think is syrup. (We'll see if gets solid when it cools -- it was 220 degrees F when I removed it from the heat.) Learned one very valuable item: filter at the mid-stage. The syrup is too thick to go through a gravity-fed filter at the last stage.

I love spending a day strolling through flea markets. A friend bought me an old syrup bottle to use in my sewing room to fill my iron with water. Since then I have collected a "few" more!
