I've always loved Tate & Lyle's use of a dead and decaying lion covered in bees and a biblical message to sell golden syrup.
Maple syrup filtered with diatomaceous earth (DE or filter-aid, right) will produce a more polished product compared to syrup gravity filtered through cloth (left). Both meet the legal standard for clarity. Occasionally, sugar sand particles are small enough so that even DE filtered syrup has a slight haze.

this is why it's handy to have a brother who's a barista at SB - you can come in and ask for a cup full of espresso shots and he'll give it to you if you say it's an ingredient for his birthday dinner. Granted, it came with lots of warnings - but he knows I wouldn't drink the stuff.

Maple syrup is a syrup usually made from the xylem sap of sugar maple, red maple, or black maple trees, although it can also be made from other maple species. In cold climates, these trees store starch in their trunks and roots before winter; the starch is then converted to sugar that rises in the sap in late winter and early spring. Maple trees are tapped by drilling holes into their trunks and collecting the exuded sap, which is processed by heating to evaporate much of the water, leaving the concentrated syrup.
Maple syrup was first collected and used by the indigenous peoples of North America, and the practice was adopted by European settlers, who gradually refined production methods. Technological improvements in the 1970s further refined syrup processing. The Canadian province of Quebec is by far the largest producer, responsible for 70 percent of the world's output; Canadian exports of maple syrup in 2016 were C$ 487 million (about US$ 360 million), with Quebec accounting for some 90 percent of this total

I made french toast this morning as an excuse to try some of the maple syrup I got yesterday from LisaNH, a Flickr friend who coincidentally lives just down the road from my father in the same tiny, rural New Hampshire town.
And the syrup was delicious, of course!

Tir a l'erable (pardon the lack of accents), is a popular food activity in Quebec during the winter. Basically hot syrup is poured on snow and then you take a popsicle stick and roll it in the syrup before it hardens and then bon appetit. Pretty darn tasty.

This is my experiment to clarify chocolate syrup with gelatin. I added it to milk and steamed it, so it was "white", but tastes of chocolate.

Ain't no maple syrup here, just some kind of corn syrup concoction! But they use the image of a leaf, perhaps to fool the people who don't read labels. I kind of wish I looked at the package before eating it because then... I wouldn't have eaten it.
Do yourself a favor and stop by one of these small town 'ice cream' shops in Vermont. Most of them are more representative of a classy diner than a simple soda-jerk stand. This particular establishment--of which the name escapes me... sorry about that--has a little gift shop attached which is where I saw this composition.
