The waffle maker that makes 3" Belgiums made the move across the country. It took so long to find one.
All the "regular" waffle makers did not make the 3,000+ mile journey.

Home-made syrup from our own maple trees. We're not looking to go into production, but more as an experience for the boys. This shows how we went from a gallon of sap to a more condensed solution and finally to what I think is syrup. (We'll see if gets solid when it cools -- it was 220 degrees F when I removed it from the heat.) Learned one very valuable item: filter at the mid-stage. The syrup is too thick to go through a gravity-fed filter at the last stage.

I've always loved Tate & Lyle's use of a dead and decaying lion covered in bees and a biblical message to sell golden syrup.
Maple syrup filtered with diatomaceous earth (DE or filter-aid, right) will produce a more polished product compared to syrup gravity filtered through cloth (left). Both meet the legal standard for clarity. Occasionally, sugar sand particles are small enough so that even DE filtered syrup has a slight haze.

Found these in an abandoned shed at Birch Hill Farm in Woodstock, Vermont. If you view at full size, you can see the labels at the top of the jars, describing the golden syrup they hold. Medium Amber anyone?

this is why it's handy to have a brother who's a barista at SB - you can come in and ask for a cup full of espresso shots and he'll give it to you if you say it's an ingredient for his birthday dinner. Granted, it came with lots of warnings - but he knows I wouldn't drink the stuff.

Maple syrup is a syrup usually made from the xylem sap of sugar maple, red maple, or black maple trees, although it can also be made from other maple species. In cold climates, these trees store starch in their trunks and roots before winter; the starch is then converted to sugar that rises in the sap in late winter and early spring. Maple trees are tapped by drilling holes into their trunks and collecting the exuded sap, which is processed by heating to evaporate much of the water, leaving the concentrated syrup.
Maple syrup was first collected and used by the indigenous peoples of North America, and the practice was adopted by European settlers, who gradually refined production methods. Technological improvements in the 1970s further refined syrup processing.
