My original plan was to make braciola ( an Italian dish made with thin slices of beef wrapped in a mixture of bread crumbs and cheeses). The braciola spoiled though because I didn't freeze it right away when I got it, so it sadly had to be thrown out. I almost cried at throwing away $7 of perfectly razor-thin, sliced beef.
The chicken breast was defrosted fast and made into chicken cordon bleu with some mozarella and ham on hand. They were then rolled in cornstarch, then an egg wash (egg/milk/spices) and finally breadcrumbs. The meats and cheeses are held together while all this rolling by a toothpick, which is later taken out when it needs to be baked. The sides are mashed potatoes, which were made by boiling new potatoes for 30 minutes with a beef bouilllon cube. The cube added so much flavor that I found I didnt' need a drop of butter, I just added some grated cheese. There was also sauteed spinach with onions & black eyed peas.

We haven't been cooking much red meat lately......I suppose because the kid has no interest in eating meat!
So the roast is a bit of a special treat, I guess.

Of course, the kid ate the "smashed" potatoes he helped to make. And some corn.
When you have your dinner on the terrace in the sunlight the lighting is much better for food pictures. I guess there are Flickr food groups, but these will do just fine.
Lunching an argentinian traditional food: "Milanesas" with mashed potatoes. Yummy!
Milanesas: thin slice of beef, dipped into beaten eggs, seasoned with salt, and other condiments according to the cook's taste. Each slice is then dipped in breadcrumbs and shallow-fried in oil, one at a time.
We prefer to use very little oil and then cook them into an oven as a healthier alternative.

Milanesas: Finos bifes de carne de vaca, empapados en huevos batido, sazonados con sal y otros condimentos según el gusto del cocinero. Cada pieza se empasta en pan rallado y se fríe en aceite, de a una por vez.
Nosotros preferimos utilizar muy poco aceite y luego cocinarlas al horno, como una alternativa más saludable.

day 49: firecracker tilapia, half rack baby back ribs, loaded mashed potatoes and broccoli. i was so full off the skillet queso starter that i wound up taking my meal home after a couple of bites.
Large. Not quite the angle I would have liked, but it's the best I could do with a small bean bag (The Pod) and a sugar dispenser as a tripod.

Tender pork tenderloin served over a bed of red pepper mashed potatoes accompanied and layered with grilled eggplant and sautéed peppers a drizzle of a soy sauce reduction and deep fried caramelized carrot strips is the finishing touch.
Slice into these at Blake's Restaurant in Puerto Vallarta.
brown sauce, sauteed spinach and yukon mashed potato. @ restaurant 2117 on sawtelle in west la. the best, most tender meatloaf i've ever put into my mouth. the sauce was like the most non-offensive ketchup, and that's a good thing, if you're familiar with traditional meatloaf.

My version of it. A bit messy, though.
Just pan-fried chicken breast stuffed with thin slices of Champagne Ham and Light Pizza Cheese. Served with really creamy mashed potatoes and white wine+chicken stock sauce. Topped with parsley leaves.
Don't tell !!!! Hot beef sandwich made with chopped ribeye scraps. White bread and pan gravy with cornstarch, butter, liquid smoke and, a splash of Worcestershire sauce.
Smashed potatoes polluted with cream and too much butter.
