this tree/trees (not really sure it's one being below ground or what) has definitely seen some wear and tear, but it's the most productive tree in our meagre sugar bush. we've got 4 taps on it now (each on a different trunk) and she just flows and flows....

It's been years since I had a Chaffle. These are so easy to make, they have cheese and eggs, that's it. I used really good Organic Pasture raised eggs and Vegan Mozzarella Cheese. Since this was the first time using this recipe I made it exactly as the recipe said but I will cut back on the amount of batter I put in the iron next time. Live and learn! They were delicious. I put some Vegan Butter and NY Maple Syrup on them. It was a very tasty breakfast.
Roadside stands are a unique business venture in farm country. Can the produce be fresher or of higher quality than hand-picked, cleaned and sold within the hour?
Often these quaint stands involve a great deal of TRUST. The farmers, being very busy during harvest, often leave the stands unattended, trusting that honest people will be visiting, calculating their own bills and paying for their purchases.
We stopped at these two stands and happily made large purchases. The owners were present and they eager to converse about their businesses and life on their farms.
This booth sold fresh picked, plump, super-sweet cherries and very flavorful maple syrup. The first comment below shows a farm stand selling lavender products.

Three for the price of one... I must say I probably eat 8 1/2 pounds of pickles in a year, but rarely eat maple syrup. Cabbage is also on my plate!

Although the photo is from last autumn, the sugar bush is awakening. The sap is flowing, and the first runs of maple syrup have been produced. Various sugar bushes help their tapping out parties last weekend, and their restaurants will soon be packed, glad to see the back of winter although it's still giving off some stormy flatulence on its way out.
The sap lines, some of which you can see to the left, will be sending their sap to the boiler.

There are approximately 132 species, most of which are native to Asia,[with a number also appearing in Europe, northern Africa, and North America]. Only one species, Acer laurinum, extends to the Southern Hemisphere. The type species of the genus is the sycamore maple, Acer pseudoplatanus, the most common maple species in Europe. Maples usually have easily recognizable palmate leaves (Acer negundo is an exception) and distinctive winged fruits. The closest relatives of the maples are the horse chestnuts. Maple syrup is made from the sap of some maple species. It is one of the most common genera of trees in Asia. Its leaves is a symbol of Canada and it is also famous for its maple syrup, used in pancakes.

I think this is my favourite sweetener of all! I like this syrup, it has caramel undertones and is made in Upstate, NY. And it is pure syrup, some aren't so I buy only the Pure or 100% syrup. It is delicious!
This is on Lisa's list of fave breakfasts, but I'm gonna do something else from her (rather long) list for my breakfast project, as I'd already made it before I read her list, so my heart wasn't thinking of her as I stirred the batter!

The sun shown all day on the Maple trees and this afternoon my neighbor began to boil the sap to make maple syrup. It's the first sign of Spring for us in the north country.
