This drive through the Minnesota woods near Grand Marais took us to a wonderful maple syrup plant. We loaded up on the fantastic product!!

This was to DIE for!! French toast made from a thick slice of Cranberry-Raisin Focaccia with fresh sliced peaches and a drizzle of Canadian maple syrup, eh!

Maple Sugaring season is over. I made a little over 8 gallons this year.

When my sweet tooth starts to ache I’ll turn some of the syrup into either maple cream, sugar or maple/peanut butter fudge.

 

I’d sell some on-line but shipping costs are prohibitive. If you want some the best thing to do is find some at your local grocery store.

No one’s syrup is better than another’s in theory (but I think mine is)

We had pancakes this morning with bacon, eggs and mango juice. We are saving the cat for a special occasion! (Pardon the Alf joke!) The horsechestnut honey is really good. It was a gift from one of my wife's clients who produces it himself with the help of some bees of course. That's m'boy holding Tara of course!

Taken for the Active Assignment Weekly! group. This week's assignment: Geometry in Nature.

 

WIT: There are many foods that contain some form of geometry, and the most obvious that came to my mind was the star fruit. I'd seen it many times in the market, but never once had enough courage to try something so exotic looking. Well, I've now tasted it, and it was delicious!!!

 

For my second submission, I wanted to introduce colour, and something more appetizing than a spider's cobweb. There's an art to photographing food, and although the presentation needs to be amazing, the other important factor that I see is the lighting. I set this up on a white paper roll, with the overhead fluorescents from my kitchen. I added a desk work lamp, directing it towards the ceiling for an added diffused glow. When all was set up, I placed my tripod as close as I could get, tested out several shots, and this second to last one was the favorite pick. I did finish with some post-processing, adjusting the colour balance slightly, and defining the edges ever so slightly more.

 

And what did I have for dinner when all was said and done? Lemon baked salmon on a bed of romaine lettuce and grated carrots, and two multi-grain crackers, with star fruit layered with masala green tomato & maple chutney, sprinkled with fresh basil & hysop herbs, garnished with a few sprigs of fresh curry from my garden.

That way I can control the amount of sweetness and especially the salt. why do they put sooooo much salt in store bought stuff? Store bought anything really ...and, restaurant anything too ... horribly salty for my taste.

 

It takes a while, seeing as I chop nuts by hand.... I have yet to find a chopper or gadget that works ...again to my liking. I've had several and tossed them...

 

If I use my food processor...I get most bits of them too small ... I like some good size nut chunks in there.... and, if you're not careful with a processor ..you get nut fluff or worse..nut butter, before you know it!! Pay very close attention...

 

And, when I went to the grocery store for Maple Syrup...I noticed they now have labels .... with good sized maple leaf emblems, right next to the price on the shelving. Just letting us know exactly what is Canadian made. No need to waste time reading labels now... although, I didn't check the produce aisle to see what they had done there. That would be more difficult. They need a U.S. flag with a big X on it ... everything else is fine... hahahha....

 

Of course, ...we have some cartels in Canada that limit our purchases anyway. The Maple Syrup cartel ...of course. We also have the dairy cartel ... we never get 'other' than Canadian milk .. ...there is also a huge sugar and flour conglomerate ... that pretty much stops any other flours and sugars ..

It's autumn at the 220 acre Bogie Mountain Farm in the rural town of Barnet, Vermont. The farm is primarily dairy, but also produces maple syrup and honey. The sugar shack is the distant red building to the left of the barn.

Sugar Shacks, where raw maple sap is boiled down into maple syrup, are scattered across most of Vermont.

This week's theme is foods that are local ("food porn"). Nothing more local I could think of for Canada than Maple Syrup. Blueberries also grow locally and looked pretty for colour so I threw those in.

 

Now photo-wise what I really wanted was the maple syrup being drizzled into the photo. However, apparently my ability to coordinate taking a photo and pour is lacking. I ended up with a massive maple puddle on my patio table which has dripped through onto my patio...... This sugary delight is now further caramelizing in the hot spring sun we are having today. Smells lovely.... I'm sure the bugs will love it.

Amerikanische Pancakes

150 gr. Mehl

100 ml Milch

200 ml Joghurt

2 EL Zucker

15 gr. (1 Pck) Backpulver

3 Eier

Salz, Olivenöl, Ahornsirup

 

Zubereitung:

 

Milch und Joghurt vermischen. Die Eier in einer Schüssel verquirlen. Mehl, Backpulver, Milch/Joghurt, Salz und Zucker nach und nach zu den Eiern geben und verrühren. Wenn der Teig zu fest wird etwas Milch dazu geben. Er muss gut dickflüssig sein.

 

Eine Pfanne auf mitllerer Stufe erhitzen. Mit jeweils einem EL Öl den Teig (immer etwa eine Suppenkelle) verbacken. Bei nicht zu großer Temperatur etwa 1 Minuten pro Seite.

 

Schmeckt mit Ahornsirup, Früchten, Puderzucker, ...

 

I was so mesmerized by the smoke and light on this volunteer's face that I neglected to include her hands (agh...does anyone else out there keep repeating the same darn mistake over and over?!) The woman was filling paper cups with maple syrup samples for the visitors...in case you wondering.

This ain't whiskey or another alcoholic thingie, but instead it is maple syrup :-)
