Fresh mozzarella, roasted peppers, olives in herbes de Provence. For the record, we don't have a panini maker - I just used our cast iron grill pan and our regular c.o. skillet as a press.
Used Zaro's ciabatta dredged in eggs beaten with Haitian rum, heavy cream and sugar. The cream had the rum, sugar and vanilla. Fresh blueberries. Yum!
Home-cooked shrimp scampi, deep fried shrimp heads, sautéed zucchini & cherry tomatoes, side of steamed kale & garlic (not pictured).
Enough to feed a small army. This will last us awhile!
PS. Could also be considered vegan, actually.
1st attempt, chicken tasted good. However, failed to come up with the ideal sauce for it. Gonna try it again!

- cabbage and potato soup
- tuna, daikon radish, and broccoli
- homemade bread
- simmered Japanese amberjack and daikon radish
- carrot and parsley saute
- boiled spinach with dried bonito
- natto and kelp flakes miso soup
Week 3 of our new Keto diet showing how we are trying to get the balance right , two meals a day , first about noon to 1 pm last about 6-7 pm giving a period of approx 16 hours during which the body has a chance to utilise existing fats within the body. They call it intermittent fasting , we call it less cooking and dishes to wash and more time for important things :-)
