Although Christmas 2009 may not have be as eventful for me as it is for you, don't worry - I got my holiday cheer on last week. One of my managers was nice enough to invite us over to his house for a little holiday get together and his wife put together one of the most impressive spreads I've seen in a while. foodforfel.com/2009/12/holiday-party-2009/

Hard-do bread and butter, cornmeal porridge, freshly-squeezed orange juice, and tea.

Dinner at the Ryan's :) Biggest plate clockwise. Five spice tofu with beansprouts and basil, stir fried Chinese sprouts (can't remember the correct name for this veg) and sambal tilapia with homemade chilli.

Better than frying them in oil. Cleaner, lower in fat, the fat from the ground meat drains into the broiling pan. Then I cook them in tomato sauce.

Almonds, dates, coconut milk, cinnamon, and lemon mixed in a food processor and then rolled in coconut.

Another of my dinner creations (I like curry). I made a soup with chicken breast meat, green beans, sugar snaps, garlic, onions, turmeric, red curry paste, and coconut milk.

 

It was great.

The chicken dish has 280 calories and 9 grams of fat per serving, and the macaroni and cheese has 360 calories and 10 grams of fat per serving. Yeah it's the "light" sort of macaroni and cheese, which is surprisingly creamy.

...after I added sour cream & hot sauce to it & now ready to sink my teeth into. This is one of our favourite meals. I have friends & friends of sons who tell me I can invite them over any time when I make tacos. Everyone seems to love my version.

 

I can easily eat 2 or 3 for a supper but at one time, when I was much younger & had a faster metabolism (& might have been nursing a baby too), I could go through 4 or 5 & still polish off a good sized home-made dessert too. Yet, I was very slim then at only 116 lb & 5'6" (53 kg &167 cm)!

This is a very simple dish but yummy-- grilled brinjal (also known as eggplant, aubergine) topped with sambal made up of dried prawns (haebee), chilli (fresh and dried), belacan, candlenut, shallots.

I cut deeply into both sides of the seabass and pushed the marinade into these slits.

Way too hot to share with the boys. I felt like some spicy food before I head to the pottery class.
