Week 3 of our new Keto diet, showing how we are trying to get the balance right. Two meals a day, first about noon to 1 pm, last about 6-7 pm, giving a period of approx 16 hours during which the body has a chance to utilise existing fats within the body. They call it intermittent fasting, we call it less cooking and dishes to wash and more time for important things :-)

If you ate this, you would think "Mmm, tasty!" You would not believe it if I told you it's gluten-free and vegan.

And yet.

PS. I'm not vegan at all, but I'm very intrigued by vegan baked goods. The science is fascinating, and I actually think they taste better than the "normal" ones -- lighter, fluffier, and not quite so heavy and rich. The one exception seems to be pie crust -- there's nothing quite like butter for that flakiness -- but for things like cornbread and cupcakes, coconut oil seems to work just fine.

PPS. I was very skeptical about the vegan cheese. In fact, when I ate it raw out of the package, it tasted more like tofu. But when melted like this, it really bears a striking resemblance to cheddar.

Hot pot dishes include thinly sliced meat, leafy vegetables includng Chinese cabbage, chrysanthemum greens (tang-oh), mushrooms, tofu, dumplings, egg, seafood, etc. The cooked food is usually eaten with dipping sauces. In Singapore hotpot is eaten all year round, not just in winter.
