This was certainly one of the most complex tasting dishes. Sweetbreads are one of my favorite things. The sweetbread here had been coated with panko and fennel pollen. The nestled in a creamy Vermouth-fennel cream and Vermouth geletin. While I was expecting a heavy anise kick, I was pleasantly surprised that it was rather tame. Appreciated the alcohol umphh added by the Vermouth.
All of this was topped with braised Iranian Pistachios (beautifully velvety-soft, yet still slightly resisting to the bite), a tingly wrapped ball of spinach, a crispy wafer of shaved ham and a crispy ribbon of white onion.
Taste: to tell the truth, each of the elements by themselves would have been splendid. Together, I think it ws a little overwhelming. Creamy and Vermouthy was the dominating themes. Personally, I would have preferred the sweetbreads to have been left alone more... I think the inherent offal-ness of the sweetbreads was lost amongst all of the flavors. The crispy ham and onion did add a welcomed "crunch" the mix.
The reserve is on the site of three major chalk quarries - Warren Gorge, Lion Gorge, and Grays Gorge which were worked from the end of the 18th century for around 150 years.
Lion Pit
In the Lion Gorge are the remnants of an old tramway cutting created in the nineteenth century to transport chalk from Lion Pit to the riverside wharves. The tramway ran roughly south from the chalk diggings to the Lion Works - a Portland cement factory opened in 1874. (Until about 1980, Thurrock was a major centre for cement production.) Part of the course of the tramway can be seen under the bridge where the railway line crosses a path from The Chase to Hedley Avenue and is also visible on London Road between The Chase and Foxton Road.

In the past, I learned Chinese by myself at home, and I had no language environment, and I couldn't find any Chinese to communicate with, so my progress was very slow. Now on Sino-bus, the teacher will take me to study Chinese systematically, and I can discuss any topic I want with the teacher, and the teacher will also exchange her ideas with me. I like this class mode so much.

Four years ago, I went to China to study abroad. After I returned home, I didn't learn Chinese for a long time, and my Chinese level dropped a lot. I started looking for an online teaching platform, and many courses on the platform couldn't meet my requirements, but Sino-bus has various types of Chinese classes. I think that's what I need, and I will keep learning.
I agreed to take part in the Director's Challenge in the 2008 Brighton Rally in my favourite old tub 5304. I could put that vehicle anywhere and wind her up faster than any Driver in the company! What I didn't bear in mind was that because she was fitted with a Hydracyclic gearbox, it was a nightmare going back and forth around the course. I was forever on the brakes and the bloody air required building up! Needless to say I didn't win but I made sure the course was filled with TL11 flavoured air, Tiger brake shudder and loads of clagging! Loved it! haha
While in Australia had I was required to take a 4WD course before heading out into the bush. Thisis an image taken from the top of the hill climb. Those are two different vehicles and this image was stitched together in photoshop. It was quite muddy because it had been raining all day making for challenging conditions.
I can't remember anything except that I'm certain we ended with Mimolette (to the far left). I'm fairly certain the second cheese from the left is Comte. I have no clue what that blue cheese is. It can't be Roquefort, and I doubt it was a Spanish blue. It might be Fourme d'Ambert, or Stilton? Unsure.

One way to get to know someone is to get acquainted with their favorites. During my visit with David, I was able to get a triple dose. The first was the chance to meet his favorite people--Lynne, his sweet, sweet wife and his son, David, and girlfriend Megan. And where did I meet them? At David's home where I was able to see the new addition to the home--an open, airy space where he works on his photos and posts his feedback to Flickr friends--and the garden that he carefully tends. Truly, it is a life-giving space and I was so blessed to be so warmly welcomed into the family. We had a couple evenings of processing photos together. One night we all went out to dinner together at a local Carvery. My favorite time together was the night we watched the semi-finals of Britain's Got Talent together and cheering on Pudsey the pup. It was a taste of England that I will always cherish.
Saturday morning, we were up pretty early to give us all the time we needed to visit David's favorite places to photograph. And what a treat to have someone share their favorite haunts. It turned out that he took me to the "England" that had lived in my memory sense I first read Black Beauty, Lassie Come Home, and Peter Rabbit. All throughout our day, I kept feeling as though someone should pinch me just to make sure everything I was seeing was real. I guess it must have as I have photographic evidence. Here's a sampling of photos from Beacon's Fell and Chipping. Tomorrow, I post photos of the Trough of Bowland.

A nice plump and fat langoustine crusted with plaintain dust and deep fried. The black bean-cumin puree and a unctuous avocado "salsa" (ie. guacamole) with a fried plaintain chip.
Taste: OHMYGOSH one of my favorite dishes that Bowles has created. This was really quite simple; he stylized it as "chip & dip." But, this was no ordinary chip & dip. The langoustine was very plumb and succulent and nicely crusted over with the fried plantain. I especially appreciated how the bits of plaintain stayed on the meat - I hate it when the fried skin completely pulls away from the surface from cakey moisture. Expert.
What really won me on this plate was the black bean puree, which had heft both in texture and taste. I lapped up every bit of the dark condiment which was smokey and dark with cumin. The avocado "salsa" seemed unnaturally buttery. Together, these two "dips" hosteda fiesta in my mouth.
Although I didn't appreciate the drink pairing by itself, with the dish, it made a lot of sense. The saltiness of the guacamole and other elements on this dish actually brought out the sweetness of the tomato - which was the missing traditional "salsa" flavor element in this otherwise true chip & dips.
This is a photograph from the second running of the Athlone Flatline Half Marathon ("The Flatline") was held at Athlone, Co. Westmeath, Ireland on Saturday 14th September 2013 at 11:00. There was beautiful weather for the event which started and finished at St. Aloysius College near the Canal Banks area of the town just slightly west of the River Shannon. This event was professionally organised and the very flat course meant that many runners both seasoned and new to the scene achieved season or personal bests. Almost 1,000 participants successfully completed the event in the beautiful September sunshine. Everyone involved must be congratulated for the flawless running of the event. This event is sure to go from strength to strength over the coming years. The "Flatline" also included an option for a full marathon which was fully supported by the Marathon Club of Ireland and the East of Ireland Marathon Series. This allowed participants to run the Flatline twice for the qualifying marathon distance. About 80 people took part.

Overall Race Summary
Participants: Such is the popularity of the race this year that registration closed for the race in mid-August 2013. There were well over 1,000 participants who took to the start line.
Weather: The weather on the day was almost perfect for running. The runners were bathed in warm September sunshine for the duration of the race and into the early afternoon. In the sections of the race out towards Clonown and around the Bord na Mona areas there was a stiff breeze but nothing major.
Course: "The Flatline" ceratinly lived up to its name. It is as flat a course as one is likely to find. A garmin connect gps trace of the route is provided here [connect.garmin.com/activity/199678412] Geographically the course spends much of the race in County Roscommon with only the first and last kilometers actually in County Westmeath. This gives geographically inclined runners the novel opportunity to race in two Irish provinces in one race. The course had distance markers at every kilometre and mile along the way. There were official pacers provided by the race organisers.

Refreshments: An Alkohol Frei bottle of Erdinger was provided to every finisher as they crossed the line. Light refreshments were served.

As mentioned above we take these photographs as a hobby and as a voluntary contribution to the running community in Ireland. Very often we have actually ran in the same race and then switched to photographer mode after we finished the race. Consequently, we feel that we have no obligations to capture a photograph of every participant in the race. However, we do try our very best to capture as many participants as possible. But this is sometimes not possible for a variety of reasons:
►You were hidden behind another participant as you passed our camera
►Weather or lighting conditions meant that we had some photographs with blurry content which we did not upload to our Flickr set
►There were too many people - some races attract thousands of participants and as amateur photographs we cannot hope to capture photographs of everyone
►We simply missed you - sorry about that - we did our best!

But we cannot promise that there will be photograph there.
