another recipe from supernatural cooking, not completely unlike this one. primarily barley, oranges, walnuts, arugula, and parmesan cheese... (as is my wont when it comes to risotto,) i think i overcooked the grains which made the whole affair kind of mushy, but it did taste pretty good :)
I haven’t been cooking anything from scratch for a while. I’ve been craving some vegetables for some time so I picked up some broccoli over lunch. As the missus was at work, I decided to cook something I hadn’t tried before. We had a box of Orecchiette pasta in the cupboard (little ear shapes) and I read on the ‘net about this simple dish called ‘Orecchiette alla Barese’ from the Puglia region so I decided to give it a go. This isn’t something for a first date, but the flavours taste great. I found a couple of recipes, but as my mother always said, just use your instinct and cook it your way.
Here’s my recipe
About 400g of Orecchiette pasta (but pasta shell will be fine)
A head of broccoli, broken into small florets and then halved.
2 – 3 cloves of garlic crushed.
3 tablespoons of olive oil (extra virgin works well)
6 large anchovy fillets, roughly chopped. (These are the fillets you get in the tins submerged in oil)
¼ teaspoon of dried chilli flakes
Some freshly ground pepper.
Boil up the pasta and cook following the instructions on the pack.
About half way through cooking the pasta, submerge the broccoli in some boiling water and cook for three minutes.
Meanwhile heat the oil in the frying pan, add the anchovies and heat gently. They should start to break up quickly, after two minutes, add the garlic and the chilli flakes and heat gently without burning the garlic for about 5 mins.
Drain the broccoli and add to the frying pan, raise the heat a little and allow the veg to soak up the oil and grind in some pepper.
Drain the pasta; add it to the frying pan along with a tiny bit of the water. Let it sit for a minute or two and serve. Grate some parmesan on top if you have any.
