"Oreo" Cookies

Ingredients
For the Dough:
1 1/3 cups Dutch-process cocoa powder
1 1/2 cups all-purpose flour, plus more for dusting
1/4 teaspoon salt
2 sticks unsalted butter, softened
2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
For the Filling:
1 stick unsalted butter, softened
1/2 cup vegetable shortening
3 cups confectioners' sugar, sifted
1 teaspoon vanilla extract
Directions
Prepare the dough: Sift together the cocoa powder, flour and salt in a large bowl.
Using a mixer, cream the butter and sugar. Add the eggs one at a time, then the vanilla, incorporating each ingredient before adding the next. Add the dry ingredients and mix just until incorporated, scraping the bottom of the bowl with a rubber spatula.
Divide the dough into 2 pieces; place one piece between 2 lightly floured sheets of parchment paper and roll into a 1/4-inch-thick rectangle. Repeat with the other piece of dough. Refrigerate both rectangles, covered with the parchment sheets, until firm, at least 1 hour or up to several days.
Using a 2-inch round cutter, cut the dough into 64 circles. (You can reroll the scraps once.) Place the cookies about 2 inches apart on ungreased baking sheets and chill for 20 minutes. Preheat the oven to 325 degrees.
Bake the cookies until they are set and slightly darker around the edges, about 20 minutes. Cool completely on wire racks.
Meanwhile, prepare the filling: Using a mixer, cream the butter and shortening until fluffy. Beat in the confectioners' sugar and vanilla.
Flip half of the cookies upside down and top each with 1 level tablespoon of filling. Press the remaining cookies on top to make sandwiches.
We decided to give the Canadian Canoe a go on this one. I think we both found the heavy paddle hard work compared to the lightweight double-ended jobby on the sea kayak.
Puhoi was a lovely little town, they even sold enourmus 1 litre bottles of Tui in the store, got two for our picnic lunch :)

My daughter baked and decorated these cookies. They were served tonight at my family's Christmas Eve celebration (which we observe on Christmas Eve Eve).

This was the first time ever when I took ape with me to the grocery store. She found this nice place to wait for me... I went to get some cheese and cream and was so scared.. They don't allow dogs to go in that store... what about apes? What could I have said if someone should have noticed her?

Santa made a stop at the Bascom Library to bring holiday cheer to many families! Along with photos, there were refreshments, crafts and face painting. As an added treat, two of the local elementary schools, Sherman Oaks and Lynhaven, performed holiday songs for all.
Do you have a book that’s so old but you turn to every now and then, this book is one of them. I bought Mrs. Fields Best Cookie Book Ever!: 130 Delicious Cookie and Dessert Recipes from the Kitchen of Mrs. Fields a long time ago (her cookies make me want to bake, I really want to make cookies, that’s delicious as her, because at that time Mrs. Fields’ Cookie was very popular, oops! now all of you can doubt my age), but I still use it often as the recipe is easy and the cookie are delicious . I like the taste of this cookie but I reduce the sugar to the lowest that the cookie’s still enjoyable, I have to accept that as we get older, we need less sugar (or if you are younger than me you can write a comment to ask for an original recipe). The cookie taste like a little banana cake with a lot of chocolate and nut, you can use chopped dark chocolate instead of normal chocolate chip which will make your cookie more sophisticated and yummy. I think you know the rule of using banana, don’t use the one that still bright yellow, we need a little darken here.

My mother in law and I make cookies at Christmas!
This year we tried these, a wafer type with colorized icing. They weren't so great. Maybe the cookies are under cooked, the icing was a little funny too.
I'm going to cook these up this year somet ime if I don't forget, test out a few alternatives. They were very plain, tasted like diet cookies but they weren't sugar free.
They look nice in the bowl though.
Now I remember why I haven't made rolled cookies in many years. Way too labour intensive. Despite all that work, my son didn't like them that much.

This year I helped my grandma again with baking cookies for Christmas - the meat machine comes in quite handy for these coconut sticks! ;)

A Christmas Tradition in our family. We use an old family recipe for the sugar cookies that uses sour cream. The cookies are always soft and delicious.
Jess and I baked cookies at her house Sunday afternoon. We listened to Christmas music (Charlie Brown Christmas and Sufjan Stevens Christmas albums HARK!) and rolled a zillion balls of cookie dough.
We made snickerdoodles, chocolate chip oatmeal cookies and peanut butter cookies with hershey kisses on top. yum! Now I'm giving away cookies to everyone I know. One girl only needs so many cookies.
