My sister found a picture on Pinterest of cupcakes decorated as Cookie Monster. So adorable! I didn't get the recipe in time for our next offload, so I used what limited decorating ingredients I could find in Dutch Harbor and made my own cupcakes. They were pretty tasty, if I do say so myself. :o)

Pudding Cookies

INGREDIENTS:

1 cup self-raising flour

1 package (3.4 oz) instant pudding mix, Vanilla or French Vanilla (I used butterscotch)

1 egg, lightly beaten

5 tablespoons butter, melted

1/2 cup chocolate chips (optional) ( I used Peanut Butter Chips)

PREPARATION:

Combine first 4 ingredients; stir until well mixed. Stir or knead in chocolate chips. With hands, form small balls of dough; place on ungreased baking sheet. These cookies don't spread, so you may want to flatten them a bit.

Bake in preheated 350f oven for 10 to 12 minutes, or until lightly browned.

Makes 1 to 2 dozen, depending on size.

Variations: Try different pudding flavors, butterscotch or peanut butter chips, or nuts.

This is the illustration going with the invitation to my Christmas exhibition. Translated it means "Cookies and Art". Yes, I agree, it does sound a bit better in German. Part of the exhibition will be that if you bring homemade cookies you will get cookies made by myself in return. Of course there are going to be a few more artists presenting jewellery, silk accessoires, calligraphie, porcelain, watercolours, metal works, and much more. So if you are in the vicinity on November 24 and 25 of this year do stop by. Coffee and cake (and champagne) will be served too. Does this sound tempting?

When these cookies are pulled from the oven, they're ready for cooling. I do all of my baking on stoneware Bar Pans from Pampered Chef. After years of use, my cookies never stick and always brown evenly.
