Lunch @ "Pollen".
"beetroot, mushrooms, egg yolk, charcoal brioche"
One of 4 "snacks" (I would call them appetisers, from the lunch set).
Served, resembling some sort of jewelry.
It was too pretty to chomp into.
The raw minced beef was plenty tasty and the brioche base was a nice logical touch to help absorb away any excess juices or marination, usually with some grated horseradish.
the steak and fish (swordfish, I think) tartares at dame tartine, behind pompidou near the hotel. so nice, we went twice
