Sometimes when I am quiet.. I have a lot on my mind. It's not that I don't want to comment and comment back. Really. I'm working through a lot of stuff in my head. I miss people, I am still in mourning, i have so much to do.. trying to get out of this deep funk.
it's just one of those days weeks months.
Of all the stuffed toys the boys had this one was probably the most popular. Each leg had a different texture fabric or toy. The ones that had a crinkle plastic in them were pretty popular for the boys to grab at.
It's been a while and I'm over at my mom's working on the craft book today, so I thought I'd do a new 'in my bag' snap. Wow... I pretty much live by what I carry with me. I wonder if that's a good thing...
(a very much latergram) the shopping street of Myeongdong in Seoul is lined with many pushcart stalls selling a variety of delicious food, such as "honey stuffed fish" pancake. this is street food at its best in the capital city of South Korea.

I had these for lunch the other day. Alaina and I love tomatoes, I think we probably have them everyday during spring and summer, so I'm always trying new ideas using them.
Tex-Mex Style:
1 onion, minced
6 garlic cloves, minced
2 tablespoons chili powder
1 tablespoon vegetable oil
4 (6-ounce) red, yellow or organge bell peppers
1 slice high-quality white sandwich bread, torn into quarters
1/4 cup whole milk
12 ounce 85% lean ground beef
1 cup of frozen corn
1 and 1/4 cups shredded Monterey Jack cheese (5 ounces)
3/4 cup of cooked rice
2 teaspoons minced canned chipotle chile in adobo sauce
Salt & Pepper
2 tablesppons minced fresh cilantro
1) Microwave onion, garlic, chili powder, and oil in bowl, stirring occasionally, until onion is softened, about 5 minutes
2) Cut top 1/2 inch of each peper. Chop pepper tops fine, discarding stems. Remove core and seeds from peppers.
3) Mash bread and milk into past in large bowl using fork. Mix in onion mixture, chopped pepper tops, ground beef, corn, 1 cup Monterey Jack, cooked rice, chipotles, 1 & 1/2 teaspoons salt, and 1/2 teaspoon pepper using hands. Pack filling evenly into cored peppers
4)Pour 1/3 cup water into slow cooker. Place stuffed peppers upright in slow cooker and sprinkle with remaining 1/4 cup Monterey Jack. Cover and cook until peppers are tender, 4 to 6 hours on low.
5)Using tongs and slotted spoon, transfer peppers to serving platter, discarding liquid in slow cooker. Sprinkle with cilantro and serve.

1 tablespoon tomato paste
1/4 teaspoon red pepper flakes,
4 (6-ounce) red, yellow or orange bell peppers
1 slice high-quality white sandwich bread, torn into quarters
1/4 cup whole milk
12 ounces Italian sausage, removed from its casing
1 small zucchini (6 ounces), cut into 1/4-inch pieces
3/4 cup shredded Monterey Jack cheese (3 ounces)
3/4 cup cooked rice
1/4 cup grated Parmesan cheese, plus extra for serving
Salt & Pepper
2 tablesppons minced fresh basil
1) Microwave onion, garlic, oil, tomato past, and red pepper flakes in bowl, stirring occasionally, until onion is softened, about 5 minutes
2) Cut top 1/2 inch off each pepper. Chop pepper tops fine, discarding stems. Remove core and sees from peppers.
3) Mash bread and milk into paste in large bowl using fork. Mix in onion mixuture, chopped pepper tops, sausage, zucchini, Monterey Jack, cooked rice, Parmesan, 1 teaspoon salt, and 1/2 teaspoon pepper using hands. Pack filing evenly into cored peppers.
4) Pour 1/3 cup water into slow cooker. Place stuffed peppers upright. Cover and cook until peppers are tender. 4 to 6 hours on low.
5) Using tongs and slotted spoon, transfer peppers to serving platter, discarding liquid in slow cooker. Sprinkle with basil and additional Parmesan and serve.
While in New Orleans for the Raider v Saints game we attended several private parties organized for Raider fans. This was the first of many we attended. These appetizers were delicious.
