There's a seafood joint on the right on the National Highway as you head back into HCMC from Vung Tau. I don't know it's name, but it serves the most incredible seafood spring rolls.

Called cha gio in Vietnamese, these are the version at the Japanese owned Oki Doki. Costa Mesa, CA

That optimal golden colour and crispy/flaky finish is achieved by using clean oil at a moderate-high temperature.

Spring Rolls made on vacation at the beach. I can still smell them.

It's Spring Rolls!!

The asian food restaurant where it just sells service and atmosphere but the chinese food is so bad!! (Im chinese so i know what good chinese food taste like)

Cafe Patrick / Marigot Vietnamese Salad with Crab Springrolls

Chinese for dinner. It was yummy. I didn't make these, they are from the take away!

Flank Steak Spring Rolls with peanut dipping sauce

Shrimp rice noodles with some sort of peanut dipping sauce.

We used two pans and cooked in batches. The results were delicious.

I made a mix to taste of these things, left to right - Ginger oil (use in moderation!) sesame oil, fish sauce, Sriracha paste, Wochestershire sauce, and wheat free soy sauce.
