Quick skillet snack cake from Baked Explorations

Not really as 'quick' as box o' cake, and certainly more of a 'snack' than you need every day. But a delicious treat!

These are a pain to peel, so I usually slice them first.

Recipe

125g butter

3/4 cup brown sugar

2 tablespoons golden syrup

1 1/4 cups toasted muesli

3/4 cup raisins

1 cup wholemeal flour

1 1/2 teaspoons baking powder

1/2 teaspoon mixed spice

icing sugar

Melt butter, sugar and golden syrup together. Add to muesli and raisins in a large bowl. Sift in flour, baking powder and mixed spice, returning husks left in sifter to the bowl. Mix until combined. Press mixture into a 18x28cm slice tin. Bake at 180C for 15 to 20 minutes. When cool, dust with sifted icing sugar or ice with lemon icing. Cut into squares.

Slice of Reality is the middle chunk of a ship that has been cut out, glass put over the sides so you can peer in and mounted on the riverbed. It’s supposed to continue the line of the Meridian, as though the line itself had cut through the ship and is found at Greenwich Peninsula.

Some of the last pizzas. We all kind of made one or two with toppings that appeal to us, and then we grabbed slices of whatever looked good from the cutting board as they were finished.

In theory, this "slicing the banana on the peel" technique negates the need for a cutting board, but the slices roll away from me often enough that I hedge my bets. Read more at a food blog near you.
