Just as I wake up, the fisherman call me up and they are bringing with me the freshest catch of the day as they cast their nets at dawn.
This fish is called Kitong here in Cebu. Now sliced ready for Tinola, inun-unan or sweet and sour.
I went a la carte instead of the dinner combos I've ordered on recent visits.
This was the sliced fish and conch rice vermicelli noodle soup
On this visit, I ordered my staple bowl of shrimp noodles and also a large bowl of fish rice vermicelli soup, topped with sliced conch and fish, cubes of firm tofu and napa cabbage. I wasn't really that hungry as I had been snacking all day (First Marham Place) after lunch at Le Cafe Michi, but my stomach seemed to open up when I opened up the menu. Yes, I finished the bowl (to appreciate the size, think half a large watermelon).
Sliced Genoa Salami added to the bowl with the pepperoni, mozerella and provolone
RECIPE
10 eggs
1 pound ricotta cheese
1 pound mozerella
1/2 pound mild provolone
1/2 pound swiss cheese
1/2 pound boiled ham
1/2 pound Genoa salami
1/2 pound pepperoni
Heat the oven to 390 degrees.
Get a HUGE bowl. Chop up the cheese & meat.
mix eggs and ricotta in a separate bowl.
Add egg/ricotta mixture to the chopped ingrediants in the HUGE bowl.
Mix well.
Pour into 4 8 inch pie plates.
Bake until done. Could be anywhere form 1 hour to 90 minutes.
Tatses best cold!
You may substitute Egg Beaters for real eggs. Feel free to use low fat or fat free cheese and low salt stuff. It always tatses good, no matter what. Hard to screw this one up. It isn't low calorie, so we only make it once a year on Easter.

Front end of a Wright Eclipse bus in the London Transport Museum. Apparently the bus was new in 2002, but after an arson attack virtually destroyed it, the front end section was salvaged and transformed into this museum exhibit at the Wright Bus factory in Ireland.
