EASY VEGAN APPLE PIE
CRUST
2 cups flour
1 tsp salt
1/4 cup cold water
3/4 cup solid vegetable shortening
Combine the flour and salt. Take about 1/3 cup of the flour and mix it together with the cold water. Cut the vegetable shortening into the remaining flour until crumbly. Add the flour and water and mix just until a dough is formed. Roll onto a lightly floured surface to about a 1/4 inch thickness. Roll to a 1/8-inch thickness and gently press into a pie tin.
FILLING
4-5 Granny Smith apples, cored and thinly sliced
1/3 cup vegan margarine, softened
1/3 cup packed brown sugar
1 tbsp ground cinnamon
1 tsp grated nutmeg
Preheat the oven to 350 degrees. Places the apples on the crust. Dot with half the vegan margarine. Stir the rest of the margarine into the brown sugar and spices and crumble this mixture on top of the apples. Bake for 45 to 50 minutes, or until apples are very soft when pierced with a knife.

If you ever find yourself in the South Slope neighborhood of Brooklyn, do stop in to Luigi's for a slice. The place has been here since the early 1970s...obviously. It's on Fifth Avenue, between 20th and 21st streets, within a stone's throw of Green-Wood Cemetery and also conveniently close to my home. It looks like thousands of other pizza places in New York, perhaps a bit more charmingly unsleek, but the pizza is completely outstanding.
New Yorkers LOVE arguing about which place has the best pizza. Or, more specifically, the most AUTHENTIC pizza. Discussing pizza authenticity is a tautology. Even in Italy, pizza varies drastically from region to region. And comparing an artisanal pie from a wood-fired oven to a giant floppy slice from Luigi's oven is silly. They are both delicious! Why would you deprive yourself of either one? Luigi's is of the old-school New York variety, but has the best and most delicious crust imaginable. Apparently they also use a lot of home-grown herbs in their sauces, and it shows. This place is comforting, 100% delicious and I'm really happy that it has, so far, survived gentrification. And for the slaves to rankings, yes, this unassuming slice joint is regularly voted the best in the city.

Hiking season also means jerky season around here, our 11 year old’s must-have trail snack. We are fortunate to be able to have access to some really beautiful beef- raised ethically and grass fed, on a family farm nearby. Jerky is incredibly simple to prepare- begin to thaw a roast, and slice to your liking while still quite cold or semi frozen (makes cutting it thin significantly easier), add your favourite marinade, leave overnight or longer to marinate, then spread thinly on dehydrator sheets, dry at 165f- Test often as it’s done faster than you think (it takes four hours for a full load on my 9 tray Excalibur). Marinade was a bit of a Korean Bulgogi but with a tweak, gochujang, a shredded apple, fresh ginger, garlic, Worcershire sauce, a smoked plum butter, coconut sugar, sea salt. before anyone says i know white bread is bad for ducks but theres a recession on and needs must,i left the house with 7 loafs of brown bread but i went to the pond in warrington,walton,and then ackers pit i ended up using more bread than i planned at ackers so had no bread for grappenhall i had some penny's in my bag not enough for brown and 2p short for white so i had to ask a stranger for 2p.
also i know its a full slice but it makes me laugh when they run round with it in there beaks they never end up keeping it as it always breaks off
