Regional & raditional dish from Savonia, which is a large region in Eastern Finland. On the name of kalakukko, Wikipedia says: "An average Finnish speaking person today finds the name somewhat amusing, as kala is Finnish for "fish" and kukko is Finnish for "rooster", leading to the oft used but non-morphological translation, "fish cock". However, the archaic form of kukko is derived from the same root as kukkaro (purse)." (Ref: en.wikipedia.org/wiki/Kalakukko)

 

So kalakukko is basically fish baked inside a loaf of bread. Usually the fish is either vendance (like here) or perch. The fish is bundled with bacon or fatty pork meat strips, so that the fat makes the filling more moist.

 

I bought it while visiting Savonia and brought it home, but my boyfriend didn't want to eat it or even try it. Many Finns these days refuse to try it because of what it looks like.

 

My late grandmother was very particular about which bakery to go for to buy what baked goods and the family of bakers called Pakarinen in the city of Kuopio, where she lived, had two rival bakeries (Hanna Pakarinen & Irene Pakarinen). This is Irene's version.

 

Here it's just taken off the oven (an hour in 120 c to re-heat it to eating temperature) and I've opened it from the top, as I've seen people do in Savonia, instead of making slices of the whole thing. Kukko should be hot and most people eat it with melting butter or margarin on top of their portion or put some in there after opening the cap.

Well.. My hubby went to grocery store earlier today and already bought everything.. almost... It's sauna evening so I wanted to have some potato chips & coca-cola. Then there is two kinds of milk. Red one is whole milk, I'm making karelian pastries and they are filled with rice pudding, which I'm always making with whole milk. Blue one is semi-skimmed. I was surprised to see from wikipedia that Finns drink more milk than other countries...

I made this bread today. Easy. Not bad for a first attempt.

 

It wasn't as dark as Julia's rye bread. We figured that it was a different brand of brown sugar that was less brown. Tasted about the same though.

In 2016, Orowheat was at it again, (they've been noticed in past years also applying "Happy St. Patrick's Day" labels on in-appropriate rye breads...) WHAT were they thinking? Nasdrovia, erin go bragh? Taken in Albany, CA by a Nikon D610 at ISO 400 with a Micro-Nikkor 105mm ƒ 2.8 AF-D lens. (not the newer AF-S G lens!) A Nikon Speedlight SB-600 was hand-held to the left of the lens.

 

Orowheat did it again in 2017!

I didn't know how much I loved smoked salmon to this day. I love my new plate as well.

Someone needs to open her aperture a little, bleh.

I think Stinky wants to leave to England. I tried to said to him that he needs to wait a couple of days still.. And that's my ryebread I was planning to eat this morning, if he wants to have some snacks for the journey it's gotta be something else with that banana...

And, ok, you need the sticky tape when closing the box, not inside. And, ok, he wants to have company for the journey, but no, no way I'm going to let Dikkens go with him!

And ... maybe he needs to buy more stamps, unused.

The recipe also called for quite a bit of yeast, and yet, the bread didn't explode. Testament to how dense the rye loaf was.

Fried herring

- pickled in spicy vinegar with apple and jerusalem artichoke, shallots, rich cream and crispy ryebread

 

Very gently fried and lightly pickled, the fish retained nice texture and was richly flavored.

Day three of crippling back pain. Significantly less crippling on Monday. Goddamn I am glad that I work from home on days like this--I was still able to get work done even though I had to spend the whole day in bed on my heating pad again.

 

I've noticed recently that I've become a big fan of rye bread. I used to hate any bread other than white bread or sourdough. I think this is because I'm getting old. The fact that my back randomly gives out on me supports this I'm-getting-old theory. Also, the fact that I'm balding, and the fact that I don't understand the music that the kids listen to these days.

I made Dan Lepard's black pepper rye bread. It's just come out of the oven so I haven't tried it, but it smells delicous.

 

Update: just tried it. It's really good. Really nice flavour of black pepper to it. I used fennel seeds in mine.

Lest one think I never am critical of any of the food depicted in my photostream, the toast was cold, and the butter wouldn't melt. :/

 

But hey, the omelette was great! And the home fries were good. :)

 

So still a great meal, overall. But the bad toast detracted from it.

A little bit of butter, a spot of tea (or a powdered energy drink), some butter...the perfect breakfast.

Cream cheese carrot spread and speck (smoked prosciutto) on pumpernickel rye make a light sandwich. The mild hint of caraway in the bread goes perfectly with the tangy carrot salad and salty speck.
