Chickpea "Waldorf" salad from Vegan Lunch Box on Reissumies rye bread, garnished with radish and chives. Lit with natural lighting - the flash photos didn't look nearly as appealing. I had a similar photo (but different bread and different veggies) of the chickpea "tuna" salad from Vegan With A Vengeance, but it didn't turn out as well as this. October 2008.

Bread and circuses - panem et circenses. And finally some cookies and tea, too. My friend is coming over tomorrow morning and I forgot to buy cookies earlier today.

 

I bought:

- 2 small bags of rye bread, total 1.90 € [$2.71]

- A pack of Tiger's Daydream tea (20 bags) 2.29 € [$3.27]

- A pack of Country Cookies - hazelnut chocolate 1.75 € [$2.50]

- Circus tickets for me and my hubby - my share 27.50 € [$39.22]

Yes, the circus is coming to town on Wednesday and we're celebrating our third wedding anniversary by going to circus on Thursday! We both agree that our marriage is one big circus, so what would be the better way to celebrate it!

 

Our anniversary is on Wednesday (9.9.09), but my hubby needs to be at school on Wednesday evening and we got better seats for Thursday's show. There are 1300 seats and we actually got pretty much the best seats possible - the second row in the middle.

 

About Sirkus Finlandia

 

Sirkus Finlandia is the biggest circus in Finland, founded in 1976. The annual tour around Finland starts in April and ends in November. The tour includes 250 shows. The artists come from all around the world, mostly from Germany, England, Spain, Sweden, Hungary and Russia. In Finland it's not allowed for circus to have excotic animals.

For St. Patrick's day; neither of us care for boiled cabbage so I make Reuben sandwiches.

This bread basically came about via me dumping the dregs of my grain bins into a multigrain, semi-enriched dough and letting it go crazy. I made one loaf with sweet, home-dried cranberries, cherries and blueberries, and left the other one au naturale.

Few things are tastier than a coarse dark rye bread with lettuce, lightly boiled eggs, dill, caviar and a good quality mayo.

Ryebread with eggs and tomato -my favourite 'fast food' right now!

Dark and dense black bread is flavoured with caraway and rye, with a hint of sweetness from molasses and grated carrots. Smear with cultured butter, it's a perfect lunch side.

 

Hooray for Lent! Nearly every restaurant in town, every third bar, several of the larger Catholic parishes and even the deli counter at the grocery store has a "Friday night fish fry". Deep-fried, batter-dipped cod; potatoes: fries, wedges or pancakes; coleslaw and a slice of rye bread are the usual components. It made a great supper last night, although I had to stick it in the toaster oven for 5 minutes after I got done putzing around getting a photo.

Left tier: the Rachel sandwich - Black Russian Rye bread with low-fat Thousand Island yogurt dressing, Swiss cheese, shaved turkey, broccoli coleslaw (half a package of broccoli slaw mixed with 1/2 cup low-fat mayo, 1 Tbl white balsamic vinegar, 1 Tbl sugar); hummus for dipping veggies.

 

Right tier: Fat-free cottage cheese with a big strawberry; assorted raw veggies for dipping; olives

Chargrilled organic rye bread, green salad (watercress, rocket & spinach), tomato & chilli fried in olive oil, chargrilled textured soya protein sausages; 22 October 2011.

Jekyll’s Sandwich: Istra capocollo, Calendar cheddar, cornichons, caramelised onions, rocket & relish on rye or white sourdough 10.00

 

Good salty cured pork neck with melted cheddar cheese on rye!

I prefered to eat the capocollo on its own to savour the mustiness from the pork neck.

 

The cheddar, cornichons, relish and caramelised onions were great though. A classic cheese sandwich.

The chef and owner both seem to know everyones names! Great coffee, great food :)

Yummy rye bread!

We were quite surprised to see that rye bread recipes all contain unsweetened cocoa powder and molasses. Julia substituted golden syrup and it was just as good.

 

The recipe also called for quite a bit of yeast, and yet, the bread didn't explode. Testament to how dense the rye loaf was.

Peggy was one of the countless volunteers at Landis Valley Museum's Harvest Days this weekend.

 

The museum celebrates Pennsylvania German history and rural culture. The historic village was filled and overflowing with visitors. Peggy and the other bakers gave free samples of bread and pastries which they made in the outdoor wood-fired bake oven. It was an October food fest.

Pickling fish is common in Europe, and so it was time to try some sprats (a small marine fish of the herring family), usually served on rye bread with butter and herbs and egg.

 

Aside from the slightly annoying small little bones (akin to grilled ell aka unagi) and that the fish itself was salty....the taste wasn't offending at all.....the egg and butter helpeing tremendously to smooth out and mask any unpleasant offnotes.

Next step is to make the bread with sour dough leaven.

Fantastic food, really.

I made these Pain au Levain boules using a recipe from Beth Hensperger's excellent book: "The Bread Lover's Bread Machine Cookbook". I love this bread. It uses a cold fermentation process that gives it a slight sourdough flavour.

Post-match salt-beef stop at The Bagel Bros in Hornsey Road, opposite Arsenal Football Club's Emirates Stadium, Lower Holloway, London.

 

I had just left the stadium after today's match (Arsenal 2-0 Cardiff City, New Year's Day, 2012) and, following strong recommendations from my sons, I made a spontaneous decision to sample the salt beef here. It turned out I was just in time to be served the last bagel of the day, so Bagel Bros heaped me up with extra beef before they closed up. I stood under the canopy of the nearby shop here to shelter from the rain, and munched my way happily through it all, before heading for a bus home. As one of my sons would say, flying in the face of current popular slang and usage, "most enjoyable". The football result helped of course.

 

Actually, I grew up spelling 'bagel' as 'beigel' and pronouncing it 'bye-gel' (consistent with its German/Yiddish spelling) not 'bay-gel'. But in London at least, bagels/beigels seem to have become as 'British' as curry and lasagne.

 

Finally, of course - up the Gunners!

My first try from the book "The rye baker". Each bread about 1300 grams

OMG, no coffee time cookies or cake in the house!! Emergency, red alert!! .... Luckily there was honey :)

Common Finnish lunch soup, nakkikeitto aka nakkisoppa, named after the used meat: wieners. Served here with rye-bread.

 

Recipe (for 2):

4 big potatoes

4 carrots

2 onions

(some garlic cloves)

250 grams pack of wieners

1 cube of thyme-basil stock base (this is what I had so I used it, feel free to experiment)

water to almost fill the kettle

pinch of salt

pinch of ground black pepper

other spices you like, that would work in salty & savory soup

 

Peel & cut potatoes & carrots into cubes/slices. Boil them in water untill they start to soften. Add the stock cube and let it melt. Add cubed onions and sliced wieners, then spices. Let the soup stand on small heat untill served.

 

Can be reheated and eaten later.

 

This time I fried the wieners on the pan & added them later to soup 'cos my shopping assistant (read: boyfriend) slept late and was lazy & slow in getting to shop on Saturday morning through all the snow.
