MEATLOAF MUFFINS
Note from a person who made these ....
These were so good....you could also just use
your own favorite meatloaf recipe if you prefer.
I cute recipe in half also.
They also take less time to bake and you could
freeze any that are leftover for another time....
or have meatloaf sandwiches for lunch the next day or two!
I used the individual aluminum disposable muffin tins
and they are a little bigger than the normal muffin pans.
Ingredients
6 oz. box Stove Top stuffing mix, any flavor
2 eggs
1 cup water
2 lbs. ground beef or turkey
1/4 cup catsup
Directions
Combine all ingredients.
Spray muffin tins with Pam spray.
Fill muffing cups to top. Bake at 350 for about 35 minutes.
Makes about 16.

My Mushroom and Cumin Meatloaf Recipe
This is a really tender and delicious meatloaf that I've been experimenting with over the years.
1 package of lean hamburger meat
1 can of tomato sauce (or about 3 quarters)
2 eggs
1/2 of a single package of crushed crackers. (milk soaked bread is also terrific)
salt and pepper
some crumbled mushrooms or a 1/2 package of mushroom slices. (add other veggies you enjoy)
1 or less teaspoon of cumin
A dash of garlic powder
Gently mix together with your hands. And bake in a small loaf pan for about 45 minutes to an hour.
Serve with your favorite side. I chose a nice caesar salad.
I've been wanting this for a long time, but I can't get Chong to cook them for me, so I'll just have to make them myself.
This is what I'm going to use to make the Korean Meatloaf, also called Korean Meatballs. I did leave out two things that are normally in them...diced potatoes and diced carrots. I was too lazy to dice them.
