I checked the internet for a vegetarian meatloaf that used Beyondmeat, simply because I wanted to try one. This is a vegan loaf, and I was a bit skeptical that it would hold together without any egg. However, It did. And the best part is that it used items that are commonly available in most kitchens, except for the Beyondmeat. Even better, it was easy-peasy and had the best glaze topping I've tried. I found it on a site called The Vegan Atlas.

Video 2 - after eating she goes for a bit of a fly around, I pick her up and she takes off right at the end, but you get a pretty good look at the size, etc. She was released after a few days, fat (thats 5g to a pip) and healthy.

Even though I wasn't raised on meatloaf, it always feels like comfort food. One day when I was 7, I asked my mom to make meatloaf, thinking it would taste as good as any of her other homecooked meals. She turned it Vietnamese by adding fish sauce and vermicelli noodles. It was a great disappointment and I haven't asked her to make it since. Instead I learned to make it myself.
Quite a simple recipe of ground beef, eggs, onion, ketchup, garlic powder, salt, pepper, and Italian seasoned breadcrumbs, mixed together and baked in the oven at 375 for an hour.
