Having fun with meatloaf. Tom thinks it's weird but I had an idea and I wanted to see what it looked like.
This recipe is from “CookingLight” …so it’s not really bad for you, or should I say it’s much better for you than a normal meatloaf… this is my all time favorite meatloaf recipes, I think I make this at least once or twice a month…
Preheat oven to 400f
1 pound ground sirloin
1 cup Picante, divided in half
2/3 cup bread crumbs (I use plain)
1egg white lightly beaten
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon Rubbed sage
Mix all ingredients together minus ½ the picante… form into a loaf, cook for 25 minutes… pour the other ½ of the picante on top and cook for another 5 minutes… let meat rest for 3 minutes before cutting…
Our recipe for meatloaf is named "Favorite Meatloaf" because it's easy to make, and even easier to eat.
Very simple food, I love it!
Made with Beef, red wine, saltine crackers, paprica, fennel seed, garlic and onion.

I was out to photograph some burrowing owls when I came across this meadowlark singing it's heart out. I stopped the car, rolled down the window, fired off a couple of shots. The background wasn't great to I carefully moved the car forward. The bird was so kind to stay in position in spite of the motor running and the singer Meatloaf's song, "Paradise by the dashboard lights", was blaring from the car radio. Hence the title of this piece.
this meatloaf uses 5 different meats at its core and then it is wrapped it bacon! this is what it looks like before you pop in the oven
My take on this recipe. It calls for quite a lot of bread crumbs as a filler, I cut down on that. It calls for a combination of ground beef and ground turkey, with sautéed onions, garlic, herbs and parsley. In my 10 years of presenting the Alpha course in prison, and eating numerous prison dinners, I never ate anything as tasty as this, most of the food on offer was pretty bland, and heavy on starch.
One of the best restaurant meals I've had in a long time. The fried okra may be the best I've ever had.
