The rotis are placed on a huge hot griddle and brushed lightly with oil. They're cooked briefly on both sides until the edges just brown. You don't want much colour.
Method
Toast hamburger bun on griddle.
Cook burger; make thin.
Sprinkle with Lawry’s seasoned salt.
Cook bacon in same pan as burger.
Put cheese on burger.
Put bacon on top of cheese until cheese melts.
Squirt ketchup, mustard on bottom bun.
Put on onions, pickles, tomato, and...

This stuff is so easy and so delicious I don't understand why it isn't just a thing that everybody always does. I mean, aside from a piece of naan here and there, how did I live forty-odd years without ever having had fresh homemade flat bread?
Store-bought pita bread is awful. Most store-bought breads are awful. (Consistent and cheap, yes. Tasty? No.)
Ingredients: Sourdough starter, water, salt, white whole wheat flour, water. (You don't need the starter for leavening or anything; it just makes the bread taste awesome.)
Procedure: Put a spoonful of starter into a bowl or onto the counter. Add flour, water, and salt. Knead until incorporated. Cover and let sit for half an hour. (You don't have to, but it gives the whole wheat flour a chance to absorb some moisture and improves the final texture.) Pre-heat a griddle. Roll the dough out and transfer to the griddle. Takes a few minutes per side; if the loaf doesn't puff up on its own, press down with a kitchen towel.

Opting out of the chaos of Black Friday, Emily and I eased into our day instead. Last night we completely forgot about the rosemary gruyere bread I’d made until we were all dead from dinner and dessert. We ended up splitting it four ways so everyone could take home a chunk. This morning I found a really good use for our quarter. I cut some generous slices and carefully carved a hole out of each one. Then I threw the whole thing on the griddle with some olive oil and cracked an egg in the hole. We do this pretty often, but I’d never tried it with my own bread.
Guys. Seriously. I will be doing this again.
While I was cooking, Emily sent me a link from bed. Cards Against Humanity did their annual stunt today. This time it was a play on Black Friday: Every 10 minutes they posted a new item for 99% off. The number of items was limited–sometimes only one–but if you got it you got it CHEAP. They had things like a $100 bill for $1; an original, signed Picasso lithograph for $60; and an all-inclusive, 10-day trip to Antarctica for 2 for $180. It was nuts! I had that site refreshing pretty much all day, and got REALLY close to buying like 5 things I didn’t need at all. I was really hoping on that Antarctica trip. I guess I really did get caught up in the spirit of Black Friday.

Pancakes cook on a griddle Sept. 11 aboard Camp Foster after the 9/11 Remembrance Run. The run commemorated the lives lost on Sept. 11, 2001, and was organized and coordinated by United Services Organization Okinawa and the Single Marine Program on Okinawa. More than 870 service members and their families participated in the five-kilometer run along a candle-lit path. Participants dressed in red, white and blue clothes to show their patriotism. After the run, the USO and volunteers with SMP provided and served a free pancake breakfast for the participants.
